Triple-Dipped S'mores Apples

One of the treats that I most look forward to when fall comes around is the candied apple.  Have you ever been to Rocky Mountain Chocolate Factory?  If there's one near you, your taste buds just might benefit from a stop there.  :)  They have amazing dipped apples in lots of varieties...chocolate, caramel, candy-coated...pick your poison.  

But if you don't want to brave the cold or whip out the cash, you can dip your own apples from the warmth of your cozy kitchen.  It's so easy and they are TO.DIE.FOR.  Talk about heaven in a bite.   

 Three layers of sweet perfection enveloping a tasty, crisp apple variety of your choice.  
They're a gorgeous and very impressive dessert.  Whoever thought to combine marshmallows, graham crackers and chocolate was nothing short of a genius.

They're too good for children and husbands too (well almost).  Not wanting to share with the littles, I tucked the beauties away and became a closet eater when I couldn't stand the temptation any longer.  When the hubby got home from work, the battle within myself began of whether or not I should even tell. But, my love for him won out in the end (lucky for him).  It's really hard to part with something this good!

Makes 6-8

Apples (just use your favorite variety)
2 T. butter
28-ounce bag large marshmallows
10 ounces milk chocolate chips
2 cups crushed graham crackers

Remove stems and skewer apples (I just used long sucker sticks and then slipped some decorative straws over them).  To skewer apples, first twist off the stem.  If your skewer is blunt, sharpen it using a utility knife to slice off one end at a diagonal angle.  Then, working on a flat surface, firmly grip your apple and push the skewer two-thirds of the way in.  If any juice leaks out, blot the fruit with a paper towel before dipping.

In a saucepan over low heat, melt butter.  Add marshmallows and stir until melted.  Dip apples, one at a time, then transfer to a parchment-lined baking sheet.  Refrigerate until set, about 14 minutes.  Then, in a double boiler over low heat (or in microwave), melt milk chocolate chips, stirring continuously if on stove, or every 30 seconds if using microwave.  Dip an apple into the chocolate, stopping two-thirds of the way up.  Immediately dip the lower third of the apple into a bowl of crushed graham crackers, rotating to coat evenly.  Transfer to a parchment-lined baking sheet.  Repeat for all apples and refrigerate until set, about 15 minutes.

    1. Thanks Courtney! I think it's about patting off the excess chocolate before dipping in the graham cracker crumbs. Simply tap the wrist of the hand that's holding the apple until the extra chocolate drips off. I also pulled off the extra marshmallow that was stuck to the bottom after it set.
