All the deliciousness of a mint brownie in a fudge-like cookie form! These simple cookies involve a doctored-up brownie mix, are dipped in the most phenomenal mint frosting, and couldn’t be easier to make! These impressive-looking yummies will win praises galore!
This week I helped host a pinewood derby for a large group of girls ages 8 to 11 in a church group that I’m leader over. It’s typically a boy scout thing, but we figured why can’t girls do it too? They had a blast! I’ll admit my husband worked on my daughter’s car until late the evening before to get it weighted and the wheels spinning just right, but it was worth it.
The event was a smashing success and the girls’ dads all agreed that we need to make this a yearly tradition. Because, let’s admit, it may have been more of a competition between fathers than the girls. 🙂
There was one dad who arrived early with a special kit which he quickly delved into and went to work, adding graphite to the wheels, checking the spin, then oiling the axels. I couldn’t help but chuckle. Apparently there’s a specific science to this thing.
It was all fun and games for my daughter. She was careful to paint her car all pretty, but beyond that, she just had a blast watching it race and wasn’t too concerned about the outcome. I’m glad she didn’t inherit my overly competitive nature by way of sports.
Her car didn’t receive an award for first, second, or third place, but we didn’t care, because we definitely won in the dessert department afterwards. I spent most the day cranking out homemade cookies to offer as refreshments. I made a double batch of my favorite Chocolate Chip Cookies and then a double batch of today’s Mint Brownie Cookies. Both almost literally flew off the plates. I was secretly hoping there’d be leftovers, but, alas, there was not a crumb remaining.
I’ve always been a huge fan of the chocolate and mint combo. How I adore a good mint brownie, but they are a ton of work! So I came up with the easiest way known to mankind to enjoy a mint brownie. I can’t brag enough about these cookies. I even used a brownie mix, so these are semi-homemade, simple, and completely irresistible! I’ve told you how I typically prefer brownies from the mix over homemade brownies. With very few exceptions, they’re just better!
These are perfectly fudgey, soft and chewy, then dunked halfway in the most incredible mint frosting that I thinned to the perfect consistency for dipping. I really don’t think it gets any more delicious than this!
St. Patrick’s Day is coming up, and I always like to enjoy a mint chocolate treat in commemoration of the lucky occasion. These are just the thing! You will not be able to stop at one!
