I always get so excited when fall rolls around! Our family has so many fun traditions, including things that we like to do and foods we love to eat this time of year. Apple treats are a big part of our autumn months! If you’ve been following this blog for any amount of time, you’ll know how I love my desserts! In fact, most of my time spent in the kitchen is spent making sweet confections for my family, neighbors and friends (and me) to enjoy.
I count it a huge triumph whenever I can fulfill my sweet tooth cravings in a way that leaves me feeling proud of my choices. So I put together this incredibly moist and delicious Applesauce Snack Cake that totally fits the bill! I added some simple swaps to make this confection a much smarter snack option without sacrificing on flavor. I know you’re going to love it! Instead of pouring in cups of sugar which most cake recipes call for, I threw in some mashed bananas and applesauce as the principal sweeteners. In lieu of all-purpose flour, I swapped in almond flour.
And last but certainly not least, in place of butter, I used Mazola Corn Oil. By substituting Mazola Corn Oil for butter, I instantly reduced the saturated fats and cholesterol in today’s recipe! And we all know that maintaining healthy cholesterol levels is important to heart health, so I’d say this is cause for a big cheer!

That’s why I’m a huge fan of the fact that Mazola Corn Oil has a smoke point higher than most cooking oils (at 450°F).
The applesauce, mashed bananas, almond flour and corn oil together make this cake ultra moist. It resembles the texture and of banana bread with a definite punch of applesauce and banana flavor. I love when I can enjoy dessert without feeling so guilty! This lighter Applesauce Snack Cake deserves to be a part of your fall gatherings! It comes together quickly, so your taste buds will be singing for joy very soon! Here’s how it’s done:

Applesauce Snack Cake
Ingredients
- 1 c. applesauce original sweetened
- 1 large egg
- 1/2 c. Mazola Corn Oil
- 2 mashed bananas
- 1/4 c. sugar
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 1 tsp. cinnamon
- 2 1/2 c. blanched almond flour
- 1/2 tsp. nutmeg
- 1/4 tsp. ground cloves
- 1/2 tsp. salt
- 1/2 c. chopped pecans
Instructions
- Preheat oven to 350 degrees Fahrenheit and lightly grease an 8x8" pan.
- In the bowl of an electric mixer, cream together applesauce, egg, Mazola Corn Oil, mashed bananas and sugar.
- In a separate bowl, stir together baking soda, baking powder, cinnamon, almond flour, nutmeg, cloves, and salt.
- Add it to the wet mixture, along with the chopped pecans, and mix to combine.
- Spread mixture into prepared pan and bake for approximately 28-35 minutes, or just until the center is set and a toothpick inserted into the center comes out clean. Let cool for at least one hour before cutting.

This dessert makes me smile for so many reasons! It just screams “Fall!” with the delightful flavors of cinnamon and other spices. I hope you get to make it very soon!
