Baked Creamy Chicken Taquitos

One of my favorite meals to serve my family is these Chicken Taquitos.  I found them on Mel’s Kitchen Cafe a few years back and they have become a regular at our dinner table.  I’m a cilantro/lime fanatic-the combo is sheer genius in my book-so naturally I was drawn to them.  With a creamy, flavorful chicken filling and a crunchy outside (with no frying involved), these roll-ups are a must-eat.  Dip them in sour cream and salsa,  guacamole, ranch, hot sauce or what have you, and they’re the bee’s knees.

 

{BAKED CHICKEN TAQUITOS}

 

4 oz. cream cheese, softened
1/4 c. green salsa
1 T. fresh lime juice
1/2 t. cumin
1 t. chili powder
1/2 t. onion powder
1/4 t. garlic powder
3 T. chopped cilantro
1 green onion, sliced finely (white and green parts equal to about 2 tablespoons)
2 cups shredded cooked chicken
1 cup grated Monterey Jack cheese (use pepperjack if you like a little heat)
Small yellow or white corn tortillas
cooking spray

Heat oven to 425 degrees.  Line a baking sheet with foil and lightly coat with cooking spray.

In a medium-sized bowl, mix softened cream cheese, green salsa, lime juice, cumin, chili powder, onion powder and garlic powder.  Stir to combine and then add cilantro and green onions.  Add chicken and cheese and combine well.  You can prepare this step ahead of time.  Just keep the mixture in the fridge.

Place 2-3 tablespoons of the chicken mixture on the lower third of a soft tortilla, keeping it about 1/2 inch from the edges.  Roll it up as tight as you can.

Place filled taquitos seam side down on the baking sheet, making sure they don’t touch each other.  When ready to bake, spray the tops lightly with cooking spray or an oil mister.

Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.  Serve immediately.

    Wow, these look delicious and easy! Going to try them. Ps. I suppose this is a dumb question but do you just get green salsa in the regular salsa aisle? I've never bought it before!

      Hi Laura! Thanks for stopping by! Yes-you can find green salsa just by the regular salsas. It's called Salsa Verde.
