These Bakery Style Chocolate Mint Cookies are thick and soft with loads of chocolate and mint flavor! I promise you won’t be able to stop at just one!
My family and I went skiing this past weekend. I had made these cookies a few hours before we left, so I packed them up and we headed out the door. The kids got to snack on them throughout our quick trip.
If there’s one thing I’ve realized over the past few years of skiing with kids, it’s that the type of day we all have is totally dependent on their attitudes and behavior. The other is that teaching kids to ski is hard! It’s definitely a sacrifice, but we are willing to make it in order to be a skiing family! I love the memories we make while doing it. It’s a lifetime sport that we will hopefully continue when our kids are grown. I’ve seen how it helps teach the kids to persevere when things get hard. Because that first year while learning to ski is not easy! You fall a lot. But if you push past that, it starts to be really enjoyable!
There are some days when we take the kids out and just have the best time on the slopes. Everyone is smiling and stays positive, even between cold falls. And then there are days where everyone is grumbling about this little thing or that, or arguing because “He got to lead this time, and I wanted to!”.
This past weekend was one of those tougher times, but, you know what? We still had a nice time overall and learned some important lessons from it. In the car coming home, we talked to the kids about what things we could all work on and how even grown-ups aren’t perfect and always need to improve.
If there’s anything that doesn’t need improvement, it’s these phenomenal Bakery-Style Chocolate Mint Cookies! I say bakery style because they are perfectly thick and soft, like something you would expect out of your favorite bakery. These are definitely not short on the chocolate and mint flavor! With cocoa powder, melted semi-sweet chocolate, semi-sweet chips, and mint chocolate chips, these will really wow your taste buds! I’m pretty sure you’ll fall in love at bite one!
We all couldn’t restrain ourselves around them! They’re too yummy! They sort of taste brownie-like, which is just what I want when I eat a chocolate cookie!
Bakery Style Chocolate Mint Cookies
Ingredients
- 1 c. butter softened
- 3/4 c. brown sugar packed
- 1/4 c. granulated sugar
- 2 large eggs
- 2 tsp. vanilla extract
- 1/2 c. semi-sweet chocolate chips melted
- 3 1/4 c. all-purpose flour
- 1/4 c. baking cocoa
- 1 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 c. mint chocolate baking pieces I used Andes
- 1 c. semi-sweet chocolate chips
Instructions
- Preheat oven to 350 degrees Fahrenheit and prepare cookie sheets by lining them with nonstick baking mats or lightly spraying with nonstick baking spray.
- In the bowl of an electric mixer, cream together butter, brown sugar, white sugar, eggs and vanilla. Add melted semi-sweet chocolate chips and mix until incorporated.
- In a separate bowl, stir together flour, baking cocoa, baking soda, and salt. Add it to the wet mixture and mix until incorporated. Add in 1 c. mint chocolate baking pieces and 1 c. semi-sweet chocolate chips and quickly mix to incorporate.
- Scoop dough into rounded balls with a 1 1/2" cookie scoop. Mine were heaping. Place at least 2" apart on the cookie sheet. Use the flat side of a cup to press the dough balls down to flatten a little.
- Bake for 8 minutes. Let cool on cookie sheets for about 5 minutes before carefully removing to a cooling rack to cool completely. Store in an air-tight container once cool.
