Barbecue Roasted Potatoes

Barbecue Roasted Potatoes are a yummy side to almost any dinner!  Flavored with your favorite barbecue sauce and baked to perfection, this simple dish is sure to be a hit with the family!
I have never been one to devote lots of thought and preparation on side dishes.  I feel like I spend most of my time on the main dish and then I don’t have much energy or desire to prepare anything else.  Are you the same way?  Yet, it’s always nice to supplement the main dish with a little something else like a veggie or salad and rolls.
But, I admit that many evenings, our “well-balanced” meal consists of a casserole or other main dish and a few pieces of fresh fruit.  We are simple type folk, what can I say?
But sometimes, when I crave a potato side and don’t want to mash them, I opt to roast them in the oven.  This is how the barbecue roasted potato was born.  I simply chopped some potatoes, tossed them with a few of my favorite seasonings and sauces, baked them up, and voila!  We had a completely delectable side that was devoured in minutes!

 

{BARBECUE ROASTED POTATOES}
1/4 c. of your favorite BBQ sauce (we love Sweet Baby Ray’s)
1/8 c. sour cream, can use light
pinch of salt
pinch of pepper
1/4 c. green onions, chopped
4 c. chopped potatoes
1/8 tsp. onion powder
1/8 tsp. garlic powder
In a large bowl, stir together BBQ sauce, sour cream, salt, pepper, green onions, onion and garlic powder.  Add chopped potatoes and toss until potatoes are fully covered.  Spray a cookie sheet with nonstick cooking spray and pour potatoes onto pan.  Arrange evenly in a single layer on sheet.  Bake at 400 degrees Fahrenheit for 45 minutes to 1 hour or until potatoes are tender.   Use a spatula to scrape and toss potatoes every 20 minutes or so, so they cook evenly on all sides.
If you’re in the mood for potatoes, this is a tasty way to eat them!  Enjoy!

    Mmm. Jeremy loves potatoes. In fact, he usually considers the potatoes to be the "main dish," and the meat to be the "side dish.". ;)
