BBQ Apricot Pulled Pork Sandwiches

My kids and I just returned from a long road trip to Grandma and Grandpa’s house.  I love that seven of my siblings are still living at home there.  My kids always can’t wait to be entertained by their fun young aunts and uncles.
After making the 10 hour trek, would you believe that the first thing my siblings said when I walked through the door was, “What are you going to make us for dinner?”  Ha ha.  I felt so loved, but I’m glad I’m good for something.  🙂  Don’t get me wrong…my mom is an excellent cook, but they get excited about out-of-the-norm meals and I’m apparently the only one who can make them once I arrive.  I can’t say that I mind in the least, since I have a group of very willing human guinea pigs at my command while I try out new recipes and dishes.
The pressure was on, so I consulted my handy Pinterest recipe board and these BBQ Apricot Pulled Pork Sandwiches immediately caught my eye.  They were a huge hit with the family, but we agreed that they were slightly too sweet.  So I adapted the recipe a bit, and here you have it…a perfectly tasty, down-home dinner straight from the slow-cooker.
I hope you enjoy it as much as we did!  I’ll definitely be making these again.
{BBQ PULLED PORK SANDWICHES}
Adapted from: Six Sisters’ Stuff
Makes 8 Servings

 

1 c. barbecue sauce
1 c. apricot preserves
1 envelope dry onion soup mix
2 T. Dijon mustard
2 T. soy sauce
3 pound boneless pork shoulder roast

 

Combine barbecue sauce, apricot preserves, dry onion soup mix, Dijon mustard, and soy sauce in a medium bowl.  Place pork roast in a slow cooker sprayed with nonstick cooking spray.  Pour sauce over meat.  Cover and cook on low for 8-10 hours or high for 4-5 hours.  Shred meat with two forks and use a slotted spoon to serve on buns or rolls.
