We’re approaching the busiest time of year! I’m always looking for ways to de-stress and simplify during this season. Whether it’s keeping activities and commitments to a minimum or simplifying my food prep, I’m all about saving time wherever possible so I can spend it with my family and loved ones.
Which is why I love ! I keep a stock of them in my cupboard so I can whip up a dessert in a moment’s notice. Simply add oil, water, and eggs; bake; and you’ve got a delightful confection to share with guests or gift to someone to brighten their day. The goes from bowl to oven in just minutes!
If you’re like me and often find yourself needing a dessert in a hurry, look no further than today’s recipe! A quick stop at Dollar General had me ready to prepare it in under an hour! It was so easy to find my in the baking aisle and then, of course, I had to browse the rest of the store to see what other treasures I could find. I always know I’m getting a great value when I shop at Dollar General. And I always end up coming home with fun items that aren’t on my list. 🙂

First, prepare the according to package directions—adding in fresh lemon juice. Spread batter into a greased 8″x8″ pan. Sprinkle with a handful of fresh blueberries. Prepare the crumble mixture by using a fork to mix together slightly softened butter, sugar, and flour until crumbs form. Sprinkle crumble mixture over the top and bake for approximately 30 minutes or just until a toothpick inserted into the center comes out mostly clean (moist crumbs are okay).

BLUEBERRY LEMON MUFFIN CRUMBLE BARS
1 (16.9 oz), plus ingredients called for on box
3 Tbsp. fresh-squeezed lemon juice
1/2 c. fresh blueberries
Crumble Topping:
5 Tbsp. butter, slightly softened
2 Tbsp. sugar
1/2 c. all-purpose flour
Preheat oven to 350 degrees Fahrenheit and grease an 8″x8″ pan. Prepare mixture according to package directions, stirring together the , fresh lemon juice, oil, water, and eggs. Gently stir in the blueberries contained in the package. Spread batter into prepared pan. Sprinkle with 1/2 c. fresh blueberries. Prepare crumble mixture by using a fork to combine softened butter, sugar, and flour until medium-sized crumbs form. Sprinkle crumble mixture over the top and bake for approximately 30 minutes or just until a toothpick inserted into the center comes out mostly clean (moist crumbs are ok). Check often to make sure it doesn’t over-bake. Allow it to cool, cut into squares, and serve.
