These Brookies are the perfect blend between a brownie and a cookie and will knock your socks off! Why choose between a cookie or a brownie if you can have both?
I love this cookie recipe because it’s so simple to make and the resulting dessert is fantastic! Don’t worry-no need to make two different doughs. You’ll use the same dough for both delicious portions of this cookie, just adding a few ingredients to make the brownie portion. How amazing is that?! Plus, they have Rolo candies in them! With each wonderful bite, you’ll get a delightful chocolate caramel surprise! These cookies cannot be beat!
Cookies have always been my favorite. Whenever I had a sweet tooth craving, they are my go-to. I typically make the Classic Chocolate Chip Cookie when I need a quick sugar fix. At times I’ll throw together my favorite Brownie recipe. But now I’m sure I’ll make this Brookie, because it is the best of both worlds! Just grab a portion of chocolate chip cookie dough, then a Rolo candy, then another equal portion of brownie cookie dough and smoosh them all together into a ball!
My kids went wild for these! I stored them in our beautiful glass-covered cake stand on the counter so they could snack as they pleased. Cake stands aren’t just for cakes! These cookies looked so pretty, displayed there. And they stayed nice and fresh!
Here’s an important tip to make them look amazing and delectable! You’ll want to position the dough ball on the cookie sheet so that it sits with half brownie and half chocolate chip cookie dough when you see it from the top view. That way, when you press them down and bake them, you’ll see both portions beautifully instead of having one portion on top and one portion on the bottom of the cookie.
You can choose to add Rolo candies or not. Sometimes they’re hard to find at the grocery store. In the case where you won’t be using them, simply add a little more cookie dough to each ball that you form to account for the missing candy inside. Still press the dough balls down with the palms of your hand to flatten them before baking. These are absolutely incredible!

Yields about 40 cookies
Ingredients
- 1 c. salted butter, softened
- 1 c. light brown sugar, packed
- 3/4 c. granulated sugar
- 2 large eggs
- 2 tsp. vanilla extract
- 3 c. all-purpose flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 c. semi-sweet chocolate chips
- 1/2 c. baking cocoa
- 1 Tbsp. milk
- 1 large package of Rolo (chocolate caramel) candies
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line your baking sheets with nonstick baking liners or spray them lightly with nonstick cooking spray.
- In the bowl of an electric mixer, cream together butter, brown sugar, granulated sugar, eggs and vanilla until light and fluffy.
- In a separate bowl, whisk together flour, salt, and baking soda. Add the flour mixture to the wet mixture and mix just until combined, scraping down the sides of the bowl in between. Quickly mix in chocolate chips.
- Take half of the dough and put it in a separate bowl. This will be your chocolate chip cookie portion.
- Keep the other half of the dough in the mixing bowl with the mixer and add to it 1/2 c. baking cocoa and 1 Tbsp. milk. Mix until fully incorporated.
- Take 1/2 Tbsp. of the regular chocolate chip cookie dough and press a Rolo candy into it. Then take 1/2 Tbsp. of the brownie cookie dough and press onto the other portion of dough, keeping the candy in the middle surrounded by dough. Form it into a ball and do the same until all of the dough is gone.
- Place dough balls 2" apart on the prepared cookie sheets. Place them so you can see half of the chocolate chip cookie dough and half of the brownie cookie dough from the top view. Press the dough balls down with the palm of your hands to flatten before baking so they will spread out.
- Bake for about 8 minutes. Let them cool almost all of the way on the pan before carefully removing to a cooling rack.
- After they're cooled completely, store them in an airtight container for retain freshness.
Notes
The Rolos are optional, but so good! If you can't find Rolo candies or don't want to use them, simply add a little more cookie dough to each ball to account for the missing candy inside. If you have leftover dough of one kind at the end because you didn't divide it perfectly in half (I certainly didn't divide it evenly), just make cookies with the leftover dough. 🙂
