Brown Sugar-Glazed Roasted Carrots

Busy evenings call for STOUFFER’S®  Lasagna with a side of oven-roasted, brown sugar-glazed carrots that taste as good as candy!
My poor, sweet baby was really sick recently.  So last week was a pajama-wearing, infant-snuggling, no sleep kind of week.  I love me some snuggles, but I’d rather it came with a smiling, laughing baby instead of the kind where he’s obviously miserable.  It broke my heart.
Luckily, my three other kids were good to step up and help out around the house since mama’s every minute was occupied with taking care of brother. Kudos to them.
Concern and exhaustion filled every day, so by the time evening rolled around I couldn’t even think about making a meal.  Yet I still wanted to show my family some lovin’ from the oven. One can only eat cold cereal so often, you know?
So I became the heroine my pasta-obsessed family needed by baking up a STOUFFER’S® Large Family Size Lasagna with Meat & Sauce that we had in our freezer, which required almost no effort on my part.  Then I whipped out some roasted carrots to enjoy on the side, which were totally no-sweat as well. I love winning at dinner!
I’ve always been a firm believer that yummy, warm food, when enjoyed with the ones we hold dear, has a way of lifting spirits and lightening the mood. It doesn’t have to be complicated or time-consuming to put together, but it always makes a difference.

The simple-to-make roasted carrots with a butter and brown sugar glaze were the perfect companion to our lasagna main dish!  Seriously, these veggies can be in the oven in a matter of minutes and the aroma is ah-mazing, especially when combined with the scent of the baking lasagna!

My kids typically turn up their noses at the sight of veggies, but at the mention of sugar, their interest was piqued and they gave them a try. 🙂  They were pleasantly surprised and even ventured to eat an entire carrot each!  Gasp!

{BROWN SUGAR-GLAZED ROASTED CARROTS}
2 lbs. carrots
1/4 cup butter, melted
3 Tbsp. brown sugar
1/2 tsp. dried rosemary
Pinch of salt
Pinch of pepper
1 clove garlic
Preheat oven to 375 degrees Fahrenheit.  Prepare carrots by removing the ends, washing, patting dry, and slicing in half lengthwise as deemed necessary.  (You want all of them to cook evenly, so you’ll need them to be about the same size).  Place on a nonstick baking surface on a cookie sheet.  Melt butter and whisk in brown sugar, rosemary, salt, pepper and garlic.  Immediately pour over carrots and place in the oven.  Bake for approximately 26 minutes, or just until carrots are tender when poked with a fork, but not overly soft.

With the perfect touch of sweet and complete deliciousness, these carrots count as a vegetable, but just might take the place of dessert! 🙂

      Thanks, Chelsea! I'm in the same boat! I'm always looking for new ways to get my kids to eat veggies, and this is definitely one of them!
