Satisfy that sweet tooth craving with a chocolate and caramel candy cookie made with gorgeous browned butter and baked to soft perfection! Don’t forget the milk!
Confession: I’d never baked with browned butter before these happened and now I’m never turning back! It lends a phenomenal depth of caramel-y flavor to these beauties! Browned butter is super simple to achieve…you just melt some butter in a pan over the stove top while stirring until it turns a beautiful amber color.
If you haven’t discovered the magic of browned butter in your kitchen yet, I suggest you do so quickly.
I’ve been making (and subsequently eating) a lot of cookies lately. I’ve often wondered just how many cookies it would take before I’d surrender and say I never want to have another again. I’m pretty sure that could never happen.
You know what else is impossible? The sheer deliciousness of today’s confection. I mean, it should be a crime to taste this good.
But I’m glad it’s not, or I’d spend the rest of my days in jail for succumbing to their temptations. Ha! I’m seriously and hopelessly addicted.
My kiddos and I have been having a dreamy summer together. We never want it to end! I feel like we’ve finally made some steps in the right direction in teaching them valuable life skills like responsibility, accountability, how to get along, the how’s and why’s of work, and of course how to have fun.
We came to an understanding the other day when I became referee yet again and had to break up another argument. I told them that every time I heard a mean word uttered or a whine let out, I’d start assigning chores. They of course tried to test the limits by responding with, “Well, what if you run out of things for us to do?” and I quickly countered with, “I’ll have you do them all over again!”
So basically they knew that I meant business and it’s been much more peaceful around here since.
I love when I’m able to get through to my kids. Especially if it means that I get my house cleaned in the process if someone slips, and it will happen. 🙂 Not that I’m hoping they’ll have another disagreement that escalates, but I sure do like the consequences.
I’ve got a messy kitchen floor with their names all over it.
But, lest you think me a coarse taskmaster, I’ll show you yet another picture of what those lucky children have been snacking on, and then I’m sure you won’t feel so bad for them.
{BROWNED BUTTER CHOCOLATE CARAMEL COOKIES}
3/4 c. salted butter, browned
1 c. brown sugar
1/4 c. white sugar
1 tsp. vanilla extract
2 large eggs
3 c. all-purpose flour
1/4 tsp. salt
1 tsp. baking soda
2 Tbsp. water
1 c. crisp rice cereal
1 1/4 c. chocolate caramel-filled candies, such as Rolos, cut in half
In a skillet over the stove top on medium-high heat, brown the butter while stirring constantly. It’ll go from yellow to getting kind of foamy and then start to turn brown. You want it to be a deep amber color but not too dark or it means it’s burned. Here’s a great picture to show what we’re going for.
Remove it from the heat and allow it to sit and cool while you begin making the dough. In the bowl of an electric mixer, cream together brown sugar, white sugar, vanilla and eggs. Add to it the flour, salt, and baking soda and start mixing. While it’s mixing on a low setting, carefully pour in the browned butter. Increase the speed when it’s mostly incorporated and continue mixing. The dough will start to look crumbly. Add in the water and mix until the dough comes together again. Quickly mix in the crisp rice cereal. Stir in the chocolate caramel candies by hand.
On a cookie sheet that you’ve sprayed with nonstick cooking spray or lined with a nonstick baking mat, place 1 1/2″ dough balls about 2″ apart. I scooped them with an ice cream scoop and then compacted them together with my hands. Bake at 350 degrees Fahrenheit for approximately 8-10 minutes. Check at 8 minutes. Don’t over bake or they won’t be soft! Allow them to cool on the cookie sheets for about five minutes before carefully removing them to a rack to cool completely. Remove residue on baking sheets in between batches. The caramel tends to stick to it.
These cookies are oozing with gooey, chocolate and caramel goodness! The crisp rice cereal in them lends a wonderful texture with a few happy surprise crunches, so don’t leave it out!
Enjoy with a tall, cold glass of milk!
