Now I know you guys don’t know me well, but we are seriously going to change that with this one little post. I love that holidays are surrounded by parties, themes, and FOOD. For more reasons than I can count, food is my favorite part about celebrating holidays. I love that you can make just the slightest little changes to your favorite recipes so that they encompass the theme of that holiday. Like making cupcakes with red, white and blue frosting for the 4th of July and adding snowflakes to your favorite sugar cookie recipe for the winter holidays.
This happens to be the same case with this butterbeer brownie brittle. Now there is really only one thing you need to know about me, to really know me. I am obsessed with a little movie series that is about a boy whose first name may go by “Harry” and whose last name quite possibly could be “Potter.” I won’t go into specifics, but I think you all are picking up what I’m throwing down.
The day that I discovered butterbeer was basically the best day of my life. I mean what’s not to love? It’s like taking a big gulp of sugary sweetness that can either be served hot or cold! The day that I discovered brownie brittle was basically the second best day of my life (next to discovering butterbeer of course). I knew that I had to combine the two into one delicious, tasty snack.
I had to do some major recipe testing with this recipe, and some patience is definitely required, but it’s 100% worth it. This recipe can be super finicky with oven temps, and can quickly go from slightly chewy to burnt to a crisp. A word of advice before giving this recipe go, keep a close eye on it! Butterbeer Brownie Brittle
Yield: 20-24 pieces

Ingredients
For the Butterbeer:
1/3 cup sweetened condensed milk
1/4 cup butterscotch sauce (store-bought)
3 tablespoons room temperature unsalted butter
2 cups vanilla cream soda
For the Butterbeer Brownie Brittle:
1/2 cup granulated sugar
1/2 cup light brown sugar
2/3 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/4 cup dry milk powder
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
3 large eggs whites
1/4 cup butterbeer
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
Instructions
For the Butterbeer:
1. In a microwave-safe bowl, combine the condensed milk, butterscotch sauce and unsalted butter. Heat in the microwave for about a minute, or until the butter is almost melted. Whisk to melt fully.
2. In another microwave-safe bowl, add the vanilla cream soda. Heat in the microwave for about 2 minutes.
3. Combine both the condensed milk mixture and the warm vanilla cream soda in a pitcher and stir thoroughly.
4. Store the butterbeer in the fridge until you are ready to use, or enjoy a glass warm!
For the Butterbeer Brownie Brittle:
1. Preheat your oven to 350 degrees F and line a large rimmed baking sheet with parchment paper. Set aside.
2. In a large bowl, whisk together the sugars, flour, cocoa powder, dry milk powder, salt and baking soda.
3. In a medium bowl, add the egg whites.
4. Add the eggs, butterbeer, butter and vanilla extract to the bowl with the dry ingredients and fold the ingredients together until just moistened. DO not over mix.
5. Pour the brownie brittle batter onto the prepared baking sheet. Spread the mixture into a very thin even layer.
6. Bake the butterbeer brownie brittle for 25-30 minutes or until crispy. There will be a fine line between the brittle coming out a tad on the chewy side and too crispy. Keep a close eye on the brittle and pull it from the oven when it’s done to your liking.
7. Once the butterbeer brownie brittle is out of the oven, transfer the parchment paper to a cutting board. Cut equal pieces out of the brittle while it’s still piping hot, and then let it cool completely.
8. Butterbeer brownie brittle will store in a cool dry place for about a week.
