A soft peanut-powder infused sugar cookie type bar spread with butterscotch buttercream frosting. This dessert is completely irresistible!
I can’t believe it’s 2016! I remember the year 2000 and thinking it was crazy I had made it to that point when people were worried about if computers would be able to make the switch or if the world was in technology jeopardy. 🙂
And now, here we are, 16 years later, in an age of smart phones, Facebook, and slim television screens. Next thing you know, we’ll have cars that drive themselves.
I’m sure that in another 16 years I’ll look back with awe at how far we’ve come as a society. Every year, advances are made that improve our quality of life and I’m so glad I live in this day and age.
And speaking of advances, I’m hoping to make a few improvements of my own in this new year. Yes, I’m a resolution setter. Are you?
Among other things, I’m hoping to exercise more and eat wiser in order to become my best self. There’s no better time than this!
But if you know me or if you’re a regular reader here, then you’re probably aware that I don’t do well without my sweets. In fact, my family encourages me to get a treat in every now and then because I’m a happier person for it. 🙂
So because I can’t and won’t cut out sugar entirely from my diet, I like to find ways to feel less guilty about eating it. I try to make smarter substitutions and then I can justify indulging in that confection, a.k.a. little piece of heaven.
So when I heard about Jif Peanut Powder and how it has all the protein of traditional peanut butter, but with 85% less fat, I knew we’d become fast friends. 🙂
It’s easy to find on the peanut butter aisle at Walmart.
It’s made solely from fresh roasted peanuts and has no added salt or sugar! I love that I can incorporate that peanut-y taste to my baked goods without all the fat. It’s also great in smoothies!
Jif Peanut Powder is the star player in today’s recipe. I’d never really thought about pairing the peanut with butterscotch flavor, but now I know it was a match made in heaven!These are like those yummy lunch lady peanut butter bars you remember from your school cafeteria, but so much better!
I just can’t say enough good things about these Butterscotch Peanut Bars! You need to make them ASAP!
The oatmeal lends a nice texture and gives them more substance without being overbearing. They’re soft and almost cookie-like, but not too heavy. The butterscotch chip buttercream icing perfectly finishes them off and leaves you wanting to say, “Wow!” out loud. So go right ahead and do it. 🙂{BUTTERSCOTCH PEANUT BARS}
1 c. butter, softened
1/2 c. white sugar
1/2 c. brown sugar
2 large eggs
1 tsp. vanilla
2 c. all-purpose flour
3/4 c. old fashioned oats
1/4 c. Jif Peanut Powder
1 tsp. baking soda
scant 1/2 tsp. salt
Butterscotch Frosting:
1/2 c. butter, softened
3 c. powdered sugar
1 tsp. vanilla
2/3 c. butterscotch chips
2 Tbsp. milk
Lightly grease a 9″x13″ pan and preheat oven to 350 degrees Fahrenheit. For the bars, in the bowl of an electric mixer, cream together butter, sugars, eggs, and vanilla. In a separate bowl, stir together flour, oats, Jif Peanut Powder, baking soda, and salt. Add to wet mixture and mix until incorporated.
Press mixture into pan and bake for 14-15 minutes, or just until a toothpick inserted into the center comes out clean. Don’t over-bake or they’ll be dry and crumbly! Let cool completely.
For the frosting, in the bowl of an electric mixer cream together butter, powdered sugar and vanilla. Set aside. In a double boiler or a small pot over the stovetop on medium heat, melt butterscotch chips with milk, stirring constantly. Make sure the milk is well incorporated and the chips are completely melted so the mixture is nice and smooth.
Pour into your mixing bowl and whip together with the butter mixture until fluffy and creamy. Spread over bars, cut and enjoy!
