Cadbury Egg Brownie Cookies are the perfect Easter dessert! A deluxe, soft, fudgey chocolate cookie with delicious, crunchy Cadbury Egg pieces. You’re going to be head-over-heels for this treat! It’s a one-bowl, easy-to-make recipe that’s sure to become a springtime tradition!
It’s hard to believe that Easter is this month! We had a snow blizzard this last weekend, so it’s not looking like spring here yet, but hopefully soon! We need the moisture, so I’m not complaining. But it will be so wonderful when the green grass start to sprout and the flowers begin to bloom. I love when the world comes alive again after the long winter. The beautiful pastels and the birds singing in the treetops make me smile. The warm sunshine on my face and clear blue skies bring me so much joy.
Easter candy is my favorite candy. Do you feel the same way? The Cadbury Eggs and the Reese’s Eggs and the Robin Eggs are all irresistible! They call my name every time I’m at the grocery store. And then when I bring them home to my pantry, I can’t stop thinking about them. I love to come up with new desserts each year to incorporate these candies. Because I believe they’re even better when enjoyed in cookies or brownies or bars.
My kids are excited to go on their annual Easter egg hunt in search of the chocolate bunnies. I always put together a little activity at our home instead of going to the community events where there are lots of others to compete with for the goodies. 🙂 Then we enjoy a delicious dinner on Sunday together that usually consists of homemade rolls, cheesy potatoes, baked ham and Carrot Cake. We eat our meal on our cute Peter Rabbit plates (from the Beatrix Potter book series) that I purchased a few years ago.
One thing’s for sure, we will be making these cookies on repeat for the next month while the Cadbury Eggs are still available to buy! It’s always a sad day when they go away. So I usually stock up big time so I can draw out the enjoyment for longer. 🙂 My oven works on overdrive during March and April, as I bake up festive, springtime treats. My kids certainly do not whine about it when they come home after school to see fresh-baked cookies waiting for them on the counter.
Easter is such a fun time! This year I’ll be playing in an orchestra for a musical performance that celebrates the resurrection of Christ. I’m so excited to be a part of it! I’ve been putting in a lot of practice time to get ready for it and I know it’s going to be beautiful with the choir and orchestra and soloists all together! Music is a big part of Easter and Christmas for me. It really gets me into the spirit of the season.
Baking is also something that gets me excited to celebrate the various holidays. I have so many fond memories that surround food traditions during holidays. Our brains naturally connect memories to things that we enjoy from certain times in our life and food is a big part of that. Oh, how I love good food, especially sweets! My family raved and raved about today’s recipe and I know you’re going to be obsessed with these brownie cookies too!

Yields About 33 cookies
Ingredients
- 1/2 c. salted butter, sliced
- 1 c. semi-sweet chocolate chips
- 1/2 c. granulated sugar
- 1 c. light brown sugar, packed
- 1 Tbsp. vanilla extract
- 2 large eggs
- 1 1/2 c. all-purpose flour
- 1/2 c. baking cocoa
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 c. coarsely crushed Cadbury Mini Eggs, plus more for topping
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Prepare cookie sheets by lining them with nonstick baking mats or lightly spraying with nonstick baking spray.
- In a large, microwaveable bowl, add sliced butter and 1 c. semi-sweet chocolate chips. Place it in the microwave and heat for 30 second increments, stirring in between, just until the chocolate chips and butter are melted. Stir until completely smooth.
- Add granulated sugar, brown sugar, vanilla and eggs. Stir by hand until completely combined.
- Add flour, cocoa powder, salt, baking powder, and baking soda and stir just until combined. Stir in 1 c. crushed Cadbury Mini Eggs.
- Chill the dough in the fridge for 30 minutes.
- Scoop and roll the dough into 1 1/2" balls and place them at least 2" apart on the prepared cookie sheets.
- Press the dough balls down with the palm of your hand to flatten, being careful to keep them in a circular shape as much as possible.
- Bake for 8 to 9 minutes, or just until set. Be careful not to overbake!
- Crush the remaining Cadbury Mini Eggs that are in the package while the cookies are baking.
- Immediately after removing the cookies from the oven, press the remaining Cadbury Egg pieces into the tops of the cookies for a pretty finishing touch.
- Allow the cookies to cool slightly for a few minutes on the cookie sheets, then carefully remove them to cooling racks to cool completely.
- Store the cookies in air tight containers for freshness.
