Who doesn’t love a good cookie bar? These Cake Mix Reese’s Chip Cookie Bars are loaded with peanut butter goodness and are so easy to make, starting with a boxed yellow cake mix!
Are you having trouble finding baking supplies right now? I’ve been stocking up on cake mixes because they are easy to find and a great base for a delicious dessert! As you probably know, I typically like to doctor them up to create an all-new, incredible treat! For today’s recipe, I worked some serious scrumptious magic! I turned a yellow cake mix into soft and luscious cookie bars that are studded with Reese’s Peanut Butter Chips and drizzled with even more on top!
My kids went crazy for them! You’ll need to press them in an 8″x8″ pan for the perfect thickness. Be sure not to over bake or they’ll quickly turn dry! They really only take about 12 to 14 minutes to bake to soft and dreamy cookie bar perfection!

Cake Mix Reese’s Chip Cookie Bars
Ingredients
- 1 pkg 15.25 oz yellow cake mix (I like Duncan Hines)
- 1 large egg
- 6 Tbsp. butter melted
- 1 1/2 tsp. pure vanilla extract
- 3/4 c. Reese's Peanut Butter Chips for including in the bars, plus 1/2 c. for melting on top
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Line an 8"x8" pan with parchment paper so it hangs over the edges. Press it down inside.
- In the bowl of an electric mixer, mix together cake mix, egg, melted butter, and vanilla extract. Quickly mix in 3/4 c. Reese's Peanut Butter Chips.
- Press mixture evenly into prepared pan. Bake for approximately 12-14 minutes, or just until set. Don't over bake or they'll be dry!
- Let them cool on a cooling rack. Melt 1/2 c. Reese's Peanut Butter Chips in the microwave (in short increments, stirring between, so it doesn't burn) and drizzle over the top of the cooled bars. Let the melted peanut butter chips set up, then slice and enjoy!
These are absolute peanut butter cookie bar perfection! Every bite is pure bliss! These disappear in a hurry! I hope you enjoy!
