Here’s a dish everyone will love! This creamy Cheesy Ham and Potato Casserole is pure comfort food and so delicious!
I served it as dinner, but this would totally work as a side too! Bring it to a gathering and it will disappear in a hurry! During the colder months, I crave all things cheesy and creamy with loads of carbs. Are you the same way?
I love a good casserole, especially when it involves potatoes, cheese and ham! If you like funeral potatoes (cheesy potatoes), you’re going to really enjoy this one! This is the fanci-fied version of funeral potatoes. The taste is elevated, because of the diced ham, but also because of the delicious seasonings: namely, sage, rosemary and thyme. That trio was meant to be together! I know you’ll agree when you try these tasty potatoes!
With it being the holiday season, there are probably plenty of opportunities for this incredible casserole to make an appearance! It is simply amazing and so delectable! The guests or party goers will devour it! I don’t believe there is such a thing as too much cheese, do you? This dish has 3 cups of cheddar, so you know it will be good. 🙂
This dish is so versatile too, because you can either use frozen hash browns (shredded potatoes), or you can pre-cook and dice your potatoes (microwave them, boil them or bake them). Or, you can use leftover baked potatoes, like I did, from our chili and baked potato party.
Then, prepare the sauce mixture by stirring together your softened cream cheese, sour cream, cream of chicken soup, and seasonings. Then toss in your diced potatoes and ham and shredded cheese. Stir it all together, spread it in the prepared pan and then bake for about an hour, or just shy of an hour, until warm and bubbly! Top with the remaining cup of shredded cheddar, then put it all back in the oven for the cheese to melt, for about five minutes. It comes together really quickly, especially if you use pre-shredded potatoes.
I’m betting you could toss some cooked bacon pieces in there too. I just now thought of that amazing possibility. 🙂 You’re going to love this warm, comforting meal on a cold evening! This would be great for a New Year’s Eve gathering too! It’d be a great way to use up those leftover baked potatoes and ham from Christmas dinner.
