Chewy Brownie Cookies

If you are a cookie, brownie or a chocolate lover (or all of the above), these are for you!   My husband asks me to make these whenever he has a team meeting because his co-workers love them, and these cookies always get rave reviews.
I usually just make them with chocolate chips, but this time I added in some luscious Hershey’s Cookies ‘n Cream Drops and they were to die for.
They are so chewy and soft and good!

Don’t you just want to sink your teeth into a handful of these?  I already did. 🙂

{CHEWY BROWNIE COOKIES}
2/3 cup shortening
2 eggs
1 1/2 c. brown sugar
1 1/2 c. flour
1 T. water
1/3 c. cocoa
1 tsp. vanilla
1/4 tsp. baking soda
2 c. semi-sweet chocolate chips
1/2 t. salt
Cream shortening, sugar, water, and vanilla.  Blend in eggs.  Stir together dry ingredients in a separate bowl.  Add to wet ingredients and mix until just combined.  Stir in chocolate chips (and some Hershey’s Drops if you’d like).  This is totally my own opinion and they are not paying me to say this, but I love the new mini candies!  Genius!
Drop by rounded tablespoons on an ungreased sheet. Bake at 375 degrees for 7-9 minutes. The key to their chewy-ness is to bake them to perfection! Cool 5 minutes. Remove to cooling racks. Makes 3 dozen.

Here they are fresh out of the oven….little pieces of heaven.Chewy Brownie Cookies are a favorite at our house!

Do you have a favorite cookie that you make over and over?

These look right up my alley since I love both brownies and cookies equally! I can't wait to try them out! By the way, I found you on the Easy Living Mom link party.
