Chicken Alfredo Lasagna

Because we love chicken Alfredo so much at our house and we can’t ever get enough lasagna, my husband and I decided to combine the two into a perfectly tasty layered dish…enter the drool-worthy Chicken Alfredo Lasagna.  It’s without a doubt an all-time favorite meal at my house.  We eat it often, at my kids’ request.
 
Our favorite sauce to use is Classico Sun-Dried Tomato Alfredo, but any variety works.  The bread crumb/Parmesan topping is AMAZING.  It’s a hearty, flavorful and just plain yummy dish!  I whip up a pan of it whenever I need to take a meal to a friend who’s just had a baby, and I always get requests for the recipe.  Little do they know that it’s semi-homemade and so easy to put together.  ðŸ™‚
 
The ingredients’ amounts are really versatile, so don’t worry about ruining dinner if you add a little extra of this or that.
 
 
 

 

{CHICKEN ALFREDO LASAGNA}
Yield: Makes one 8×8 pan

 

3 large chicken breasts, cooked and shredded
6 lasagna noodles, cooked
1 jar (15 oz.) of your favorite Alfredo sauce (we typically use Classico Sun-Dried Tomato Alfredo)
1 container (16 oz.) cottage cheese
1 cup Mozzarella cheese, shredded
1/2 cup Parmesan cheese
1/2 cup fine breadcrumbs

Cook lasagna noodles according to package instructions.  Boil chicken breasts until fully cooked.  Shred and put in a medium bowl.  Pour the Alfredo sauce over chicken and stir.  In a separate small bowl, combine bread crumbs and Parmesan cheese.  Spray 8×8 pan with cooking spray.  Spread a thin layer of sauce mixture on bottom of pan, just to wet it.  Top with three rows of noodles (cut them with kitchen shears in order for them to fit in the pan).  Use the smaller pieces to cover one row.

Next, evenly spread the container of cottage cheese over the noodles.  Sprinkle Mozzarella cheese over the top of the cottage cheese.  Top with three more rows of noodles, again cutting them to fit.  Spread half of remaining sauce mixture over the top of the noodles and then top with last noodles.  Spread last half of the sauce over the top of the noodles and sprinkle bread crumb/Parmesan cheese mixture over the top.  Bake at 350 degrees Fahrenheit, covered in foil, for about 30 minutes, or until bubbly.  Remove the foil for the last 5-7 minutes of bake time so the bread crumbs can brown.

      Yes, you certainly can. Just make a little more of the sauce/meat mixture to make up for it.
