If this Chicken Bacon Ranch Rice Casserole doesn’t win smiles at the dinner table, nothing will! It’s full of flavor and comforting goodness!
My inspiration for this casserole is this Slow Cooker Creamy Chicken and Rice. It’s one that my family absolutely adores and begs for on a regular basis. So I decided to serve it up in a slightly different form and add broccoli, bacon and cheddar cheese! You simply can’t go wrong with bacon. 🙂
I love that the rice and chicken make it so hearty and then the broccoli makes you feel better about eating it. 🙂 It’s one of those meals that will warm you right through and give you a big pat on the back for whipping up dinner on a busy evening. Your taste buds will thank you too! The wonderful ranch flavoring comes from a packet of dry ranch dressing mix. And then you throw in some cream cheese and cream of chicken soup as well. The result is complete deliciousness!
My family couldn’t get enough of it! It’s so quick and easy to make! I used canned chicken because I love to eliminate the need to cook chicken whenever possible. It saves so much time and I actually really love the flavor of canned chicken. You can also use rotisserie chicken. Or be a real hero of dinnertime and cook fresh chicken! Whatever you choose, it’s going to be fantastic!
When you’re looking for a meal to take to someone in need, this is it! It feeds a crowd and is sure to please! I mean…bacon…need I say more?
Can I tell you the easiest and best way to cook bacon? Skip the stove top mess and bake it in the oven! Place it on a cookie sheet that’s lined with a nonstick baking mat or tin foil and bake at 400 degrees Fahrenheit for about 20 minutes, or until it reaches the desired crispiness. This method is brilliant! There’s no turning back once you do it this way.
I’ve said it before, but I’m a total casserole fan! Stir a bunch of delicious ingredients together and you get something that’s even more delicious! Plus, they come together in a hurry. This Hamburger Corn Casserole and this Chicken Fajita Casserole and this Chicken Noodle Bake are probably my most favorite casserole recipes, along with today’s recipe, of course.
My kids complained about the broccoli at first sight, but then they were so amazed at how the collective flavor was, that they didn’t seem to care anymore. 🙂 That’s a huge win in my book! I love when I can incorporate veggies into the main dish so my kids don’t have to complain about eating them alone.
When you serve this phenomenal casserole for dinner, you can be sure that it’s going to be a hit! My husband walked in the door and said, “I smell bacon!”. He knew dinner was going to be good.

Chicken Bacon Ranch Rice Casserole
Ingredients
- 1 lb. chicken breasts cut into bite-sized pieces and cooked in a skillet over the stove top in 2 Tbsp. olive oil (with salt and pepper) (use about 3 c. shredded rotisserie chicken or 1 lb. canned chicken, drained, to make it super easy!)
- 2 c. chopped broccoli
- 3 c. cooked rice about 1 c. uncooked
- 8 oz cream cheese softened
- 1 10.5 oz can cream of chicken soup
- 1 oz. pkg. ranch seasoning salad dressing and recipe mix
- 1/2 c. milk
- 4 pieces of bacon cooked and crumbled
- 2 c. shredded cheddar cheese
Instructions
- Preheat the oven to 350 degrees Fahrenheit and spray a 9"x13" pan with nonstick baking spray.
- Place the broccoli in a pan with enough water over the stove top and allow it to come to a boil. Allow it to boil for a few minutes (4 or 5), or just until it's tender. Drain.
- Use an electric mixer to cream together softened cream cheese, cream of chicken soup, dry ranch dressing mix, and milk.
- In a large bowl, stir together cooked chicken, cooked broccoli, cooked rice and the sauce mix.
- Spread the mixture into the prepared pan. Sprinkle cheese over the top, then sprinkle cooked bacon over the top of the cheese.
- Cover the dish with foil and bake for 25-30 minutes or until hot and bubbly. Remove the foil, then return it to the oven to bake for 5 more minutes, uncovered.
