Chicken and Biscuit Casserole

‘Tis the season for comfort food, and I couldn’t be happier! How about you?

Southern cuisine has always been a favorite of mine. There’s just something so delightful about a creamy casserole with loads of bacon, veggies and of course buttery biscuits! Especially when it’s cold outside, I crave all foods that will sit with me for a long while and give me fuzzies inside! Who needs a comfy, thick sweater to beat the chills when this casserole is on the menu? It’ll warm you right through!

Plus, when good food and wonderful company are in the picture, mealtime becomes a memorable experience rather than a rote evening-time ritual to be completed. I look forward to sitting around our dining table each evening as the sun starts to set, relaying the day’s events and laughing together. Dinner is a perfect time for family bonding!

Especially during the colder months, I’m pretty much always in the mood to be in the kitchen, cooking up a storm around the warmth of the stove and oven. I really enjoy coming up with new recipes to feed my family. It’s fun to throw in a little of this and a pinch of that to concoct something so yummy that will put smiles on all the faces!

I can honestly say I get a big kick out of watching a delicious, creamy mixture bubble and thicken over the stovetop, with anticipation of an incredible experience that awaits my taste buds.

Ingredients

  • 3 Tbsp. butter
  • 1 medium onion, diced
  • 8 oz. mushrooms, sliced
  • 3 large carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 garlic cloves, minced
  • 1/2 c. chicken broth
  • 1/4 c. all-purpose flour
  • 12 oz. bacon, cooked and crumbled
  • 2 c. chicken broth
  • 1/2 c. heavy cream
  • salt and pepper to taste
  • 1/2 tsp. dried chives
  • 1/2 tsp. dried thyme
  • 1 tsp. dried rosemary
  • 1 tsp. dried parsley
  • 2 c. cooked, shredded chicken
  • Biscuits:
  • 2 c. all-purpose flour
  • 1/2 tsp. baking powder
  • 1 tsp. sugar
  • 1 c. buttermilk
  • Salt to taste (1/4 to 1/2 tsp.)
  • 1/4 c. butter, melted

Instructions

  1. Preheat oven to 400 degrees Fahrenheit. For the stew, in a large pan (I used my Demeyere 12" pan) over medium high heat, melt butter, add garlic and stir until fragrant. Add carrots, onion and celery. Saute 5-7 minutes. Add mushrooms; saute about 5 minutes or until tender. Add 1/2 c. chicken broth and cook 2 minutes while stirring. Sprinkle veggies with 1/4 c. flour and cook, stirring, constantly for 2 minutes. Slowly add 2 c. chicken broth, stirring constantly. Bring mixture to a boil, stirring constantly, for 2 minutes or until thickened. Stir in heavy cream, salt, pepper, chives, thyme, rosemary, and parsley and cook for an additional minute, while stirring, just until thick and smooth and veggies are all the way tender.  Stir in chicken and bacon. Cover and remove from heat.
  2. For the biscuits, whisk together flour, sugar, baking powder and salt in a large bowl. Add buttermilk and melted butter and stir just until combined. Drop biscuit mixture onto the chicken mixture by large spoonfuls (about 1/4 cup each), 1/2 inch apart. Place pan in oven and bake at 400 degrees Fahrenheit for approximately 35 minutes. **Be sure to read the instructions for your pan and make sure it is oven safe! If biscuits don't brown, brush them with butter and place the pan under a broiler for about 2 minutes. Be sure to watch it carefully so it doesn't burn. Serve immediately.
