I have a bunch of canned chicken in my pantry that I’ve been using to make dinner even easier. A trick I learned a while ago is to boil a bunch of chicken, shred it, and separate it into portions in zip top bags and freeze it. That way, I can just pull it out and thaw it when I need it. I’ve always dreaded cooking chicken. But it’s really simple to do in today’s recipe! You’ll cut it into chunks and it cooks up really quick!

Chicken Fajita Skillet Meal
Ingredients
- 2 Tbsp. olive oil
- 2 chicken breasts diced into 1" pieces
- 1/2 red and 1/2 yellow bell pepper or whatever colors you choose, sliced thinly into strips, then sliced in half
- 1/2 large yellow onion sliced into rounds, then sliced in half and separated
- 1 1/2 c. chicken broth
- 1 1/4 c. instant white or brown rice make sure it's instant
- 3/4 tsp. salt
- 1/2 tsp. garlic powder
- 1 1/4 tsp. chili powder
- 1 tsp. cumin
- 1/4 tsp. paprika
- 1/4 tsp. onion powder
- 1/4 tsp. sugar
- 1/2 tsp. oregano
- Toppings/accompaniments:
- Sour Cream
- Shredded Cheddar Cheese
- Flour Tortillas
Instructions
- In a large skillet over the stove top on medium-high heat, saute bell pepper and onion slices in olive oil for 2-3 minutes. Add chicken chunks. Stir and cook until chicken chunks are cooked through and bell peppers and onions are tender. Add chicken broth, instant rice, salt, garlic powder, chili powder, cumin, paprika, onion powder, sugar, and oregano. Stir and allow it to come to a boil. Cover, reduce heat, and allow it to simmer on medium/low for about 10 minutes, or just until rice has absorbed most of the liquid and is tender. Stir and enjoy immediately with sour cream, shredded cheddar cheese and tortillas, if desired.
