Family dinner is so easy and delicious when Chicken Pot Pie Noodles are served! This meal is sure to be devoured in a hurry!
Do you ever find yourself in a dinner time rut? The kind where, you don’t know what to make or you know what you want to eat, but you don’t have the motivation to make it? It happens to the best of us! Just know that you are not alone. Even a food blogger like me gets in a place where I struggle to find the time/desire to cook and clean up a meal.
So I have a list of my go-to dinner ideas that I call upon every time I’m feeling this way or in this place in my life. We’re all so busy, but each of us can take 20 to 30 minutes to make a warm, comforting meal for our family! Sometimes I feel like my kids may not fully appreciate it now, but later on, they’ll recall these days and know that their mom placed an emphasis on gathering them around the table to enjoy a meal as a family. Those memories will be so warm and cozy!
Ever since I started a family, I began to really appreciate all of the effort my mom put into planning and preparing meals for my family, growing up. That’s a sacrifice you don’t forget and that you really truly only appreciate after you become the one who’s responsible for making food to put on the table every night.
I just love Chicken Pot Pie-all of the yummy flavors, colors and textures it entails. So I figured, why not make it with noodles instead? How I love noodles! This might just be my favorite version of Chicken Pot Pie yet! My family went wild for it too! It comes together in around 30 minutes and uses ingredients you probably already have on-hand in your kitchen.
It’s creamy and satisfying and so incredible! My kids gave it the big stamp of approval by scarfing it right down. Most of it is made in a skillet. If you use rotisserie or canned chicken, you’ll dirty even fewer pans and cut down your prep time by quite a bit. This one’s going on the menu on-the-regular! I hope you love it as much as we do!
I find myself gravitating to chicken recipes when it comes to my meal planning. There are just so many tasty ways to use chicken in your evening meal! My kids love chicken too, so it is our number one protein around here. I love to shred and freeze rotisserie chicken to make dinner prep so easy.

I don’t know what I’d do without my no-fuss meal recipes! I know I wouldn’t be cooking as often as I do, that’s for sure! I typically cook 6 nights a week. Meal planning and then sticking to the plan is key! I’ve found that it ends up saving me so much time and money to do things this way.
I can’t wait for you to try these Chicken Pot Pie Noodles! They’re going to put a big smile on everyone’s faces! To make this, first start cooking your chicken and egg noodles. Next, add the chicken broth, garlic, flour, salt and pepper and frozen veggies to a skillet, whisk and allow it to simmer until the veggies are tender and heated through completely.
Next, stir in the Swiss cheese and allow it to simmer on low until it thickens more, while stirring often. Lastly, stir in the cooked chicken pieces and the cooked egg noodles. Allow it to heat through for a few minutes over the stove top, then serve!

Ingredients
- 16 oz. egg noodles (medium or large), cooked according to package directions and drained
- 2 large chicken breasts, cooked and shredded
- 12 oz. package of frozen peas and carrots
- 2 c. chicken broth
- 1/2 c. heavy cream
- 2 tsp. minced garlic
- 3 Tbsp. all-purpose flour
- 1/2 tsp. salt, or to taste
- 1/2 tsp. pepper, or to taste
- 1 c. shredded Swiss cheese
Instructions
- In a large skillet over the stove top, whisk together chicken broth, heavy cream, minced garlic, flour, salt and pepper.
- Add frozen peas and carrots, stir, and allow the mixture to come to a boil while stirring intermittently. Turn the heat down to medium-low and allow it to simmer, uncovered, until the veggies are tender and warmed through completely. Stir frequently.
- With the stove top on low heat, stir in the shredded Swiss cheese and allow the mixture to simmer and thicken more for a few minutes.
- Stir in the cooked, shredded chicken and the cooked, drained egg noodles. Add more salt and pepper if desired, stir, and serve immediately.
