If you’re looking for an easy dinner idea that the whole family will love, these Chicken Teriyaki Bowls are where it’s at!
A few weeks ago, I got to fly out and visit my sister, who just had a baby. I had the best time snuggling her sweet babe. That newborn smell is the best! We had a beach day and did some clothes shopping, ate tons of good food and just laughed and talked all the days! I was sad when it was over.
While I was there, we ate out at this amazing place where we ordered Chicken Teriyaki Bowls. We were completely silent while eating. There were no words for how delicious it was. And we didn’t want to take the time to talk, because that meant we weren’t enjoying the phenomenal food that was in front of us. 🙂 Do you ever eat in total silence because the food is just so good?
We devoured our bowls and commented that we wished we had more, haha! You can never have too much of something that good! So we both vowed to go home and recreate the Chicken Teriyaki Bowl for our families.
Literally the second I got home from my trip (after midnight), I told my husband about it and said that I was heading out to the grocery store first thing in the morning to get everything to make it. We had company for dinner that evening, and I served these glorious Chicken Teriyaki Bowls. There were smiles and “yum!”‘s all around.
I love how colorful they are with all the veggies! I created a homemade teriyaki sauce that’s SO easy and better than our favorite store bought version! I know you’ll love it too! I have to say, the edamame are my favorite part. I could eat edamame all day!
These Chicken Teriyaki Bowls are healthy and satisfying and absolutely delicious! I cooked my chicken chunks over the stove top with most of the veggies, but you’re welcome to grill your chicken, if you’d rather.
For this recipe, you’ll need a large skillet. It will be full to the brim! You’re welcome to half this recipe. I made it for company, so I made a lot. Or, you can cook the chicken and veggies in shifts, which is what I did.
Chicken Teriyaki Bowls
Ingredients
- 3 c. white or brown rice cooked according to package directions
- 4 medium-sized chicken breasts cut into bite-sized pieces
- 2 Tbsp. olive oil
- Greek Seasoning or salt and pepper or other all-purpose seasoning
- 3 green onions finely chopped
- 1 c. red cabbage chopped
- 12 oz. edamame
- 1 head broccoli chopped
- 3 oz. shredded carrots
- 1 red bell pepper chopped
- Teriyaki sauce you'll probably want to double this:
- 1/2 c. granulated sugar
- 1/2 c. soy sauce
- 1/4 c. apple cider vinegar
- 1 clove garlic minced
- 1/2 t. ground ginger
- 1/4 t. black pepper
- 2 T. cornstarch
- 2 T. cold water
Instructions
- Earlier in the day, prepare the teriyaki sauce, as it tastes better if it can sit in the fridge for a few hours. To prepare the teriyaki sauce, combine sugar, soy sauce, apple cider vinegar, garlic, ginger, and black pepper in a small saucepan. Bring to a boil over medium-high heat. While the soy sauce mixture is heating, whisk together cornstarch and cold water. When the soy sauce mixture comes to a full boil, whisk in cornstarch mixture and stir sauce until thickened. Remove from heat and allow to cool, then transfer it to a sealable container and place in the fridge for a few hours.
- Cook rice according to package directions.
- Boil the broccoli and edamame together until the broccoli is tender. Drain and set aside.
- In a large skillet over the stove top on medium-high heat, add olive oil, chicken breasts, green onions, red cabbage, shredded carrots and red bell pepper. Season with salt and pepper or all-purpose seasoning.
- Cook, while stirring, until chicken is no longer pink and veggies are tender. You may need to cook it in shifts if you're not halving the recipe. Drain juices and stir in 1/2 cup teriyaki sauce and cooked broccoli and edamame. Stir and heat through.
- Serve chicken and veggie mixture over cooked rice and drizzle generously with teriyaki sauce (homemade or store-bought).
Notes
