Chocolate Banana Hazelnut Cookies

This incredible, soft cookie, infused with crunchy chopped hazelnuts, tastes like a chocolate-dipped banana!
I’m always in the mood for cookies, as you may know if you’re a regular reader.  99% of the time when I make dessert, it ends up in the form of cookies.  I make it my personal quest to come up with the most unique and also completely irresistible cookies known to mankind and then share them with you. 🙂  How am I doing?
Have you made these Chocolate Turtle, Chocolate Raspberry, Rocky Road, Orange Creamsicle, Carrot Cake or Strawberry Shortcake delights yet?  If not, you need to go on a cookie-baking marathon this summer.  🙂
I’d love to hear what your favorites are, if you can possibly choose just two or three.
The chocolate pudding mix makes these super duper soft and they’re a perfect excuse to use up that last overripe banana in the fruit basket.
One of my favorite things to dip in melty chocolate when we happen to pull out the fondue pot, are bananas.  Being the chocolate banana bread fan that I am, too, I thought why not produce it in a delectable cookie form?  These are a blue ribbon winner!

{CHOCOLATE BANANA HAZELNUT COOKIES}
1 c. (2 sticks butter) softened
3/4 c. brown sugar
1 pkg (3.9 oz.) chocolate instant pudding and pie filling (dry, unprepared)
1 ripe banana, mashed
2 large eggs
1 tsp. vanilla
2 1/2 c. flour
2 Tbsp. baking cocoa
1 tsp. baking soda
1/4 tsp. salt
1/3 c. chopped hazelnuts
1 c. chocolate chips
Preheat oven to 350 degrees Fahrenheit.  In the bowl of an electric mixer, cream together butter, brown sugar, chocolate pudding mix, mashed banana, eggs, and vanilla until well mixed.  Add flour, baking cocoa, soda and salt and mix until incorporated.
Stir in hazelnuts and chocolate chips by hand.  Using a 1 1/2″ ice cream scoop or a spoon, scoop dough, round it with your hands, then place it 2″ apart on a greased or baking mat-lined cookie sheet.  Bake for 8 to 9 minutes.  Don’t over bake. Remove from oven and allow to cool on cookie sheet for a few minutes before removing to a cooling rack to cool completely.  Store in an airtight container to keep fresh.
Just promise me that you’ll make these really soon, mmmmkay?  Your taste buds will sing praises!  They’re sure to satisfy that chocolate craving in a big way too!  And, hey, they can count as healthy since you’re getting in a scant serving of fruit with every cookie, right?  🙂
