Birthdays are cause to celebrate in a big way with yummy, indulgent desserts, and it certainly wouldn’t be a party without this colorful Chocolate Birthday Skillet Cookie! It’s loaded with…you probably already guessed…chocolate! It’s gooey, fudgey, and melt-in-your-mouth incredible!
Today is my birthday! I won’t let on just how old I’m getting to be, because I don’t want to be depressed on my special day. But suffice it to say that I’ll be completely content with my age, as long as I have this big, soft and gooey cookie in front of me, just waiting to be devoured!
If you’re a regular reader of my blog, or even if you’re not, you probably know about my long-time love affair with chocolate. It has my heart! My hubby already knows and he’s completely cool with it.
When my husband asked where I wanted to be taken for dinner to celebrate, I quickly replied with, “I have no preference, so long as I get to eat chocolate for dessert!”. If it were up to me, I’d probably eat dessert for dinner on my birthday. Skip the salad and main course and bring on the sweets! Yeah!
Because calories totally don’t count on this once-a-year occasion. So I’ll be taking full advantage of that made-up, wishful statement and just praying that my waistline will be kind to me as a special gift afterwards! Haha!
There is seriously nothing better to me than a huge, divine scoop of fresh-out-of-the-oven, gooey chocolate cookie! And of course, since it’s my birthday, I had to add colorful sprinkles and M&M’s to make this treat even more festive!
It didn’t take long before the vanilla ice cream started flowing scrumptiously over that phenomenal top, warm cookie crust. Oh darn, I guess I better eat quickly! 🙂
I’ll be partying hard today with my family and enjoying copious amounts of chocolate and ice cream. Is there a better way to do a birthday? I think not!

Chocolate Birthday Skillet Cookie
Ingredients
- 1 c. butter softened
- 4 oz. cream cheese softened
- 1/4 c. granulated sugar
- 1 c. packed brown sugar
- 2 eggs
- 2 tsp. vanilla
- 2 1/2 c. all-purpose flour
- 1/2 c. baking cocoa
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 c. chocolate chips
- 1 c. M&M's divided
Instructions
- Preheat oven to 350 degrees Fahrenheit. In the bowl of an electric mixer, cream together butter, cream cheese, both sugars, eggs and vanilla. Add flour, baking cocoa, baking soda and salt to the bowl and mix until fully incorporated. Stir in 1 c. chocolate chips and 1/2 c. M&M's.
- Press mixture into a 12" oven-safe, non-stick skillet. I used my cast iron skillet. If you don't have a 12", 10" will do too, but the cookie will be thicker so you'll need to bake it for longer.
- Press remaining 1/2 c. M&M's on top and bake for approximately 15-20 minutes. I baked mine for 15 and it was still slightly gooey, which is how I like it. If you prefer it to be less gooey, shoot for the other end of the spectrum.
- Remove from oven and serve warm with vanilla ice cream and sprinkles.
If I had one birthday wish, it would be that everyone on the entire planet could enjoy a giant Chocolate Skillet Cookie! There’d be no way to avoid smiling, blissfully singing and joyfully dancing! This cookie could bring world peace! 🙂
