I love chocolate and mint together. They are meant to be made into a cookie. When I saw the mint fudge baking chips at Walmart I knew I had to grab a bag for cookies. I’m so glad I did! These are absolute perfection!
I think it’s perfectly fitting that these are the last recipe I post for the year 2020. They’re phenomenal and so worthy of rounding out the year here on I Dig Pinterest. And now, as my Christmas gift to you, I share this Chocolate Mint Chip Brownie Cookie recipe! I hope you’ll bake up a batch soon!
Chocolate Mint Chip Brownie Cookies
Ingredients
- 1 c. salted butter softened
- 1 1/2 c. granulated sugar
- 2 large eggs
- 2 tsp. vanilla extract
- 2 c. all-purpose flour
- 2/3 c. baking cocoa
- 1 tsp. baking soda
- scant 1/2 tsp. salt
- 1 c. chocolate mint baking pieces plus about 3/4 c. more for melting and drizzling (I used Great Value Mint Fudge Flavored Baking Chips, but Andes Mint Baking Chips or any other chocolate mint baking chips will work)
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line cookie sheets with nonstick baking liners or lightly spray with nonstick baking spray.
- In the bowl of an electric mixer, cream together butter, granulated sugar, eggs and vanilla extract until creamy and fluffy and well blended.
- In a separate bowl, whisk together flour, baking cocoa, baking soda and salt.
- Add flour mixture to the wet mixture and mix just until incorporated.
- Stir in 1 c. chocolate mint baking pieces by hand.
- Scoop or form dough into 1 1/2" balls and place at least 2" apart on prepared baking sheets.
- Bake for 7 minutes or no more than 8 minutes.
- Allow cookies to cool on the cookie sheets for a few minutes before carefully removing them to cooling racks to cool completely.
- After they're cool, melt about 3/4 c. chocolate mint baking pieces in the microwave and stir until smooth, then drizzle over the cookies and let set and cool completely. Store in an airtight container.
