Cool Key Lime Pie Bites

Citrus is the perfect summertime taste…it’s so light and refreshing.  Combine it with cool whip, sweetened condensed milk and a thin graham cracker crust, and it’s heaven in a bite.  These Key Lime Pie treasures are just that.  Straight out of the fridge or freezer, they are meant to please the parched palate-to satisfy the cool craving on a crazy hot day.

Instead of making them in the typical pie pan, I put them in an 8×8 glass square baking dish, then cut into mini bites for added cuteness.

With just a few ingredients, they come together in minutes!

 

 
{KEY LIME PIE BITES}
1 (10 inch) prepared graham cracker pie crust (or an 8×8 glass baking dish and homemade crust listed below)
1 (14 oz.) can sweetened condensed milk
1/2 c. key lime (or regular lime) juice
1 (8 oz.) package frozen whipped topping, thawed
2-3 drops green food coloring, optional
Graham Cracker Crust:
1 c. graham crackers, crushed
3 T. butter, melted
Combine cracker crumbs and melted butter.  Press crust into bottom of pan, and up sides if using a pie plate.  In a large bowl, stir condensed milk and lime juice.  Stir in a few drops of green food coloring if desired.  Fold in whipped topping and stir until smooth. Pour mixture over graham cracker crust and spread evenly.  Refrigerate at least 1 hour before serving.  You can also freeze it for an hour or so to achieve a more solid texture.

    I have Key Lime extract, I mainly use it for Key Lime White Chocolate Chip Cookies, do you think I could use the extract instead of the juice? If so, how much would you suggest?

      Hi Jessica! I would recommend using the key lime juice. Extract has a more concentrated flavor, so you would need to use a lot less. The consistency and flavor works out perfectly with the 1/2 c. of lime juice.
