Country Apple Cake

Fall is just around the corner, which means loads of apple desserts! This Country Apple Cake will have you cherishing this wonderful time of year and the flavors that come with it!

My dad used to make a delicious Coffee Cake for our family, growing up, on special occasions (like Sundays when there was time to make a big breakfast).

I’d been craving it for a very long time, and with apples coming into season, I thought it would be the perfect time to “re-create” this recipe to incorporate the glorious fall fruit.

It of course had to include pecans, but you can sub in walnuts, if you prefer. I just love the texture nuts add to treats like this!

I like to use Granny Smith apples in all my baking because they are tart and best suited for the purpose. Nothing says, “It’s fall time!” like a cinnamon apple cake!

Because this is more of a coffee cake, it is unfrosted and wonderfully divine as is. But, you are welcome to add a simple powdered sugar and milk glaze over the top, if you fancy. To me, that’s just overkill, considering this cake is perfectly sweet!

It kind of resembles a cross between a cake-y Cinnamon Roll and a delectable Snickerdoodle Cookie. And you all know how I feel about the two of those treats! I could eat them all day e’ry day!

I’m not a coffee drinker, but I’d sure like to enjoy a slice of this cake with a big mug of hot chocolate on a cool fall morning. It’s a great breakfast or brunch cake! I love to eat it warm, fresh out of the oven.

Are you ready to say goodbye to summer? We’ve had one for the books, but I always look forward to the changing leaves, the lower temps, and of course the autumn treats!

It’s just about time to break out the skinny jeans and boots! Yay!!! I have to say, my fall wardrobe is by far my favorite.

I can’t get enough of the pumpkin and apple confections! If you haven’t tried these Dutch Apple Pie Bars or this Pumpkin Pie Cake, you are really missing out! I can’t wait to make them again as a celebratory action to officially welcome fall!

But, in the meantime, I’ll be snacking on lots of this Country Apple Cake!

Ingredients

  • 2 large eggs, beaten
  • 1 c. sugar
  • 6 Tbsp. butter, melted
  • 1 c. milk
  • 1 Tbsp. fresh squeezed lemon juice
  • 2 c. all purpose flour
  • 3 tsp. baking powder
  • 3/4 tsp. salt
  • Topping:
  • 1/2 c. brown sugar
  • 2 tsp. cinnamon
  • 2 Tbsp. flour
  • 2 Tbsp. melted butter
  • 1 1/2 c. finely diced apples (I like Granny Smith), plus a spritz of fresh lemon juice
  • 1/2 c. chopped pecans or walnuts

Instructions

  1. Preheat oven to 375 degrees Fahrenheit and grease a 9x13" cake pan.
  2. In the bowl of an electric mixer, cream together beaten eggs, sugar, melted butter, milk, and lemon juice.
  3. Add flour, baking powder and salt and mix until incorporated. Pour in prepared pan.
  4. Prepare topping by stirring together brown sugar, cinnamon, flour, melted butter, apples (spritz some juice from the lemons you already used over the diced apples) and nuts until combined. Sprinkle over cake batter and bake for approximately 25 minutes, or just until a toothpick inserted into the center comes out clean. Watch it closely so it doesn't overbake. Let cool slightly, then serve warm.

Notes

*Dice the apples really finely or they'll sink to the bottom of the pan.
