This comforting Crockpot Creamy Ham and Veggie Soup will warm you right through on a cold winter’s day! It’s so satisfying, creamy and delicious!
My sister and I were talking the other day about how we could literally eat soup every evening for the entire cold-weather season and never tire of it! Now, our kids and husbands may feel differently, but I’d be perfectly content never to eat another meal except soup from October to February!
A little bit ago, we had a huge snow storm and church ended up getting cancelled on Sunday! The next day school was cancelled for the kids as well! I love days like this when there’s nowhere to go (in fact, there’s good reason not to go) and I can just stay in, all cozy, and bake!
So I made some homemade bread and put this incredible Creamy Ham and Veggie Soup in the crockpot to simmer all day. It was an experiment and it worked out wonderfully, so I’m excited to share the yummy recipe with you today!
Since we were pretty much snowed in, I raided our fridge and pantry to find whatever I could to make a warm and comforting soup for my family to enjoy. This is what came of it!
I threw in all the veggies we had-carrots, celery, potatoes, and onions. Then I fried up some leftover ham pieces to give it an unbeatable flavor! The creamy, cheesy soup base is irresistible!
It’s hard to go wrong with a soup where you literally throw all the ingredients into a crockpot and then forget about it until dinner time! You will need to add the milk, cream cheese and cheddar at the end (the last hour), so keep that in mind.
This was a very happy discovery that I hope you get to enjoy again and again, like we will! I don’t know about you, but I don’t think I could survive without my slow cooker!
Crockpot Creamy Ham and Veggie Soup
Ingredients
- 2 stalks celery diced
- 1 medium onion diced finely
- 3 tsp. minced garlic
- 3 carrots peeled and diced
- 3 medium potatoes peeled and cut into small cubes
- 1/2 jalapeno seeds and membranes removed, minced finely
- 4 c. chicken broth
- 2 c. diced ham chunks-pan fry it before adding it for the best flavor!
- 1 c. milk
- 3 Tbsp. flour
- 4 oz. cream cheese softened until almost melted
- 1 c. shredded cheddar cheese
- 1 tsp. Sriracha hot sauce optional but highly encouraged-it adds incredible flavor without much of a kick
- salt and pepper to taste
Instructions
- In a crockpot, add celery, onion, minced garlic, carrots, potatoes, jalapeno, chicken broth and pan-fried ham. Add a pinch of salt and pepper. Allow it to slow cook on high for 5 hours or low for 6-8 hours.
- About one hour before you're ready to serve it, whisk together milk with flour. Whisk in softened cream cheese and add it to the crockpot. Stir until it begins to thicken and any cream cheese chunks melt. Stir in shredded cheddar cheese until it melts. Stir in Sriracha sauce and add salt and pepper to taste. Allow it to thicken and warm through for about an hour, then enjoy!
