Elegant Broiled Shrimp

I’ve never been a seafood person. I’m one of those people who, when given a menu full of steak and seafood platters, would order chicken every time…that is until a few months ago. My husband has been slowly and very strategically introducing me to the amazing deliciousness of white fish and shrimp when they are cooked to perfection and with the right marinades and seasonings. I now love white fish. I’m still not a fan of cold shrimp, but I thoroughly enjoy eating it warm as it is in the amazing dish I’m about to introduce you to..

Let your eyes feast upon this right now.  I wish your mouths could too, but you’ll have to take my word on its delightfulness and make it yourself very soon.  🙂

The recipe is courtesy of my mother-in-law.   It looks like something you could order from a fancy restaurant, but it’s an absolute breeze to make…shhhhh….I won’t tell.  With the perfect blend of flavor and texture and topped over noodles of your choice, it’s phenomenal to the taste.

We like to moisten the noodles with olive oil and milk, then stir in a little Parmesan cheese and lemon juice for added flavor.  The results are completely delicious.

{ELEGANT BROILED SHRIMP}
1 lb. (about 16) extra large fresh or frozen raw shrimp, peeled and de-veined, tails removed
3/4 c. coarse or fine bread crumbs-fresh or packaged (I use Italian Style)
3 T. butter, melted
3/4 t. finely chopped fresh or minced garlic
1/4 t. lemon pepper seasoning
1/3 c. feta cheese, crumbled
chopped fresh parsley, optional
Heat broiler.  Cut each shrimp lengthwise down center of back but do not cut all the way through.  Place shrimp on greased, foil-lined cookie sheet.  Open shrimp to flatten; pat dry with paper towels.  Combine bread crumbs, 1 T. melted butter, garlic, and lemon pepper seasoning in small bowl.  Evenly top shrimp with crumb mixture.  Sprinkle with cheese.  Broil 6 to 8 inches from heat until shrimp are pink, bread crumbs are deep golden brown, and cheese begins to soften (4-5 minutes).
To serve, drizzle shrimp with remaining butter and sprinkle with parsley.
Noodles:
1 pkg. spaghetti noodles
1/4 c. Parmesan cheese
3 T. olive oil
2 t. lemon juice
1/8 c. milk (add a little more if you think it needs to be more moist)
Cook noodles until soft.  Drain.  Stir in Parmesan cheese, olive oil, lemon juice, and milk.  Top each serving of noodles with a generous helping of shrimp.OR

Toss noodles with some yummy alfredo sauce.
