Oh how I love chips and homemade tomato salsa, especially when it involves completely fresh ingredients! Yum!
A few weeks ago, I was on a salsa kick. I had a bunch of fresh tomatoes that I needed to use up quick, so I started experimenting with different ingredient combinations. I literally ate a big bowl of salsa all to myself as a snack every day just for the excuse to “continue to experiment”. All for the cause. 🙂 You should feel special.
Each version was so yummy, because it’s hard to go wrong when you throw a bunch of fresh vegetables in a blender and then dip chips in the resulting concoction, but today’s recipe was definitely the best!

{FRESH TOMATO SALSA}
Four medium fresh tomatoes
1 clove garlic, finely minced
1/2 sweet onion
One green onion stalk
One jalapeño, seeds and membranes removed
3 Tbsp. fresh cilantro
Juice of 1/2 lime
3/4 tsp. salt
Place all the ingredients in a blender or food processor and pulse until desired texture is reached. I like mine thick and chunky, so a few pulses was all it needed. Refrigerate for 1 to 2 hours to bring out the flavors. Grab some tortilla chips and get dipping!
I didn’t think it was spicy, but I have grown a bit immune to heat in my food, so if you prefer your salsa to be very mild, simply reduce the amount of jalapeños, and be sure to remove the seeds and membranes.
Depending on the brand and variety, I do like store-bought salsa, but you simply can’t beat fresh, and it can be ready in a hurry! Hey, it’s healthy, too!This would also be splendid in tacos, or atop burritos and enchiladas!
