Frozen Fluffernutter Bars

What better way to spend a hot summer day than enjoying a cool and refreshing Frozen Fluffernutter Bar? A Keebler Fudge Stripes Cookie bottom with a Cocoa Krispies layer, fluffy peanut butter marshmallow creme filling, and chopped cookies on top.  This is a not-to-miss dessert!

Our summer is off to a great start. The mornings are busy with taking kids to swimming and tennis lessons. And then afternoons are a little more chill after coming home. We like to spend time outdoors playing water and other games.

The kids are already complaining about the heat. I told them 80 degrees is not hot! It’s about to get a whole lot hotter as the month passes.  They’ll soon start wishing that 80 degree weather would return. 🙂

So when they’re red in the face and sweaty after playing some serious tag in the yard, I like to invite them in for a yummy refreshment. I earn major “super mom” points that way and then they’re recharged and ready to head back out for some more fun, giving me some much-needed quiet time to myself. It’s a win-win situation…sweet treats and “me time”! 🙂

There’s always been a special place in my heart for Keebler Fudge Stripes Original Cookies and Kellogg’s Cocoa Krispies. Put the two together with peanut butter and marshmallow and you’ve got one amazing dessert! I simply can’t resist this spectacular combo!  I’d like to see if you can! 🙂

I grabbed all the ingredients for today’s incredible confection at Target. I love any and every excuse to shop there. 🙂

Have you ever heard of a Fluffernutter? Well let me educate you in the delicious ways of this phenomenal dessert. A “fluff” of peanut butter and marshmallow are spread over layers of marshmallow-coated Cocoa Krispies and whole Keebler Fudge Stripes Cookies. The result is complete and utter perfection! It tastes like a candy bar!

These would be so perfect for serving at summer BBQ’s and other gatherings! Because who doesn’t love a cool treat when the temps are soaring high outside?

Here’s how to assemble them:

Frozen Fluffernutter Bars

Ingredients
  

  • 18 Keebler Fudge Stripes Cookies
  • Cocoa Krispies Layer:
  • 2 Tbsp. butter
  • 3 1/2 c. mini marshmallows
  • 2 1/2 c. Cocoa Krispies
  • Peanut Butter Layer:
  • 1 c. heavy cream
  • 1 tsp. vanilla extract
  • 2 Tbsp. powdered sugar
  • 1 c. smooth peanut butter
  • 1 tub 7 oz. marshmallow creme
  • Topping:
  • 1 c. coarsely-chopped Keebler Fudge Stripes Cookies
  • 1/2 c. Cocoa Krispies

Instructions
 

  • Lightly spray a 9x13" pan with nonstick cooking spray. Line the bottom of the pan with Keebler Fudge Stripes Cookies. You'll need to cut some in half to fill in the extra space on the side.
  • For the next layer, melt butter in a large skillet or pan over the stove top. Add marshmallows and stir constantly while allowing them to melt over the heat. Stir in Cocoa Krispies. Carefully and quickly spread mixture over the cookies with your hands. I like to rub butter on my hands to prevent the mixture from sticking to me.
  • For the next layer, whip the heavy cream in the bowl of an electric mixer with the vanilla and powdered sugar. Transfer whipped cream to another bowl, scraping it completely out with a spatula. In that same bowl that you used to whip the cream, add peanut butter and marshmallow creme and cream together with an electric mixer. Add whipped cream and mix it all together with an electric mixer. Spread over Cocoa Krispies layer.
  • Sprinkle with 1 c. chopped Keebler Fudge Stripes Cookies and 1/2 c. Cocoa Krispies. Cover with foil and freeze for about 3 hours. Cut into squares with a sharp knife and serve.

If this is what summer is, I never want it to end! Bring on the heat, so long as I get my Fluffernutter fix!

    Yum! I love fudge stripes (my husband and I were actually talking about them like two days ago!) so this would definitely go over well here!
