Funfetti Cookies with Peeps Marshmallow Frosting: March Mystery Dish

Funfetti Cookies with Peeps Marshmallow Frosting are a perfect Easter treat! A soft, chewy sprinkle-infused cookie made from a cake mix, with a light and pretty marshmallow buttercream icing colored solely from melted Peeps.  Yum!

I made these for this month’s Mystery Dish challenge.  Kat from I Want Crazy was host and selected a winner list of ingredients.  We were asked to use three.

Boxed Cake Mix
Peeps
Oats
Ginger
Honey
Wine
Shallots
Coconut
Shrimp
Cherry Tomatoes
Kiwi
Dried Fruit
Cinnamon

I immediately knew what I was going to make upon laying eyes on this list.

I mentioned last week that I despise Peeps, and today I’m going to literally eat my words.  🙂  I’m happy to do so, because this marshmallow frosting is incredible! I’m a naturally a picky person, but I try every once in a while to eat things that I normally wouldn’t, in a different form, to see if I like them better.  Peeps marshmallows are one of those things that I would never just snack on straight out of the package, but are a perfect add-in to buttercream frosting!  Wow!

I’ve always loved Funfetti cake, so I jazzed up the batter a little to prep it as cookie dough and gave it a pop of extra flavor with some almond extract.  The result is perfection!

 

This is what spring looks and tastes like in cookie form!  I’ll take a stack of them with some milk, please!  Peeps marshmallows in frosting form and Funfetti cake mix were meant to be married.  And isn’t everything better with sprinkles?  I think so.

 

The oats contribute to the fantastic texture of the cookie, but unless you’ve seen the recipe, you almost wouldn’t know they were there.

{FUNFETTI COOKIES}

1 pkg. (15.25 oz.) Pillsbury Funfetti Cake Mix
1/2 tsp. almond extract
1/3 c. vegetable oil
2 eggs
1/2 c. old-fashioned oats

Preheat oven to 375 degrees Fahrenheit.  In the bowl of an electric mixer, mix all ingredients until combined.  Dough will be slightly sticky.  Roll into balls and place on an ungreased cookie sheet.  Use the floured bottom of a glass to flatten the cookie balls to about 1/4″ thickness.  Then bake for 7-9 minutes.  Let cool for one minute before removing to racks.

{PEEPS MARSHMALLOW FROSTING}

1/2 c. softened butter
1/2 c. powdered sugar
1/4 tsp. almond extract
1 tsp. butter
1/2 c. Peeps marshmallows, melted

In the bowl of an electric mixer, cream together (1/2 c.) butter, sugar and almond extract until well combined.  Set aside.  Melt  1 tsp. butter in a pan over the stovetop, then add Peeps and melt over medium-low heat, stirring constantly.  When smooth and no lumps remain, let sit for about 1 minute to cool slightly.  Then quickly add it to the creamed mixture and mix on high until well combined.  Immediately frost the cookies.  Frosting will have a glaze-like consistency, then set up rapidly, so work quickly.  Top with sprinkles if you’d like.

These were a huge hit with the kiddos!  I mean who doesn’t love a cute pink bunny made up as frosting and served on sprinkled cookies? 🙂

    Okay, I might have to try this frosting. I hate Peeps, they taste too fake for me. But hubby LOOOOOOOVES them. This may end up being the great compromise I've been looking for!
