As a busy mom, I’m always trying to conjure up yummy and easy meals that will satisfy my family’s tummies and taste buds, and these Granola-Crusted Chicken Tenders certainly do that!
This holiday season has been a busy one for us, and I don’t see it slowing down, even once the New Year arrives. We seem to run from this activity or that errand to the next, trying to work in homework, music practice time, and meals somewhere in between. It’s quite the feat, but I’d venture to say you’re in the same boat. 🙂
It’s such a fun time of year, but it’s also hectic! I’ve said before that I’m a firm believer in the family gathering around the table to share the evening meal, whenever possible, no matter how busy each member may be.
As such, I make a point of preparing a warm, homemade meal, as often as possible, for us to enjoy over our dinner conversation. I’m also an advocate of the fact that making a tasty dinner for the family doesn’t have to require lots of thought or work, and today’s recipe is certainly proof of that.
We love eating chicken in various forms at our house, so I picked up some Quaker® Simply Granola on my last trip to Walmart and decided to use it to crust some chicken tenderloins! It ended up being a winning idea, if I do say so myself.
Quaker® Simply Granola is easy to find on the cereal aisle at Walmart.{CRUNCHY GRANOLA-CRUSTED CHICKEN TENDERS}
1 lb. chicken breast tenderloins (mine were about 1-2″ wide)
1/2 cups all-purpose flour
2 eggs, beaten
2 cups Quaker® Simply Granola, with Oats, Honey Raisins & Almonds
salt and pepper for seasoning

To start, you’ll need to get out three large bowls or round cake pans, in my case. Add 1/2 c. flour to one.
Beat 2 eggs in another pan.
Then add 1 1/2 cups Quaker® Simply Granola to the last bowl or pan. I used the Oats, Honey, Raisins & Almonds variety.
Next, salt and pepper your tenderloins really well and roll or toss them to coat completely in the flour.
Next, turn the tenderloin around in the egg mixture to coat.
Lastly, roll the tenderloin in Quaker® Simply Granola, pressing it into the mixture to ensure the granola sticks to the tenderloin. I chose not to have the raisins on my finished product, but you can certainly put them on yours if you’d like.
Arrange the tenderloins, in a single layer, in a pan that’s been lightly sprayed with non-stick cooking spray and bake at 350 degrees Fahrenheit for approximately 30 minutes, or just until chicken is completely cooked through. You want them to stay tender and moist, so don’t over-bake.
We served ours with a prepared Pineapple Jabanero Sauce and the combo was fantastic! I love the texture and substance the granola lends to the chicken! It adds a pleasant crunch!

While dinner was in the oven, I threw together a quick and tasty snack, with some additional Quaker® Simply Granola, that I pre-allotted into bags to munch on, on those busy days when I’m out-and-about and need something yummy to tide me over between meals!
There’s no right or wrong way to do this, so just start by adding a bunch of Quaker® Simply Granola to a big bowl, then stirring in some chocolate chips, roasted, salted almonds and chopped pretzels (or mini pretzels). Separate into re-sealable bags and keep them in a place where you have easy grabbing access before you dart out the door!What are your favorite easy dinner and/or snack ideas?
