Green Peppermint Holiday Bark: Kids in the Kitchen

Oh my goodness, do I have a treat for you today!  This Green Peppermint Bark is incredible!  With just four ingredients, there’s a pretty good chance that it’s the easiest holiday dessert you will ever make.  I’m thinking these would look absolutely gorgeous packaged in a Mason jar, labeled with a simple “Merry Christmas!” tag, and finished with a big red bow.  What neighbor wouldn’t love to receive that as a gift?
I love layered confections.  The mix of colors and textures in this bark makes a huge statement.  Another added bonus is that these are hand-held, and you can control the size depending on how large or small you cut the chunks.
Peppermint is one of my favorite flavors.  Partnered with white chocolate, it’s a divine duo!

What a pretty sight!  The colors and flavors of the holiday season perfectly combined in an edible, sweet delicacy.

This is a great time to call for the kiddos-pajamas and all.  Lounging around on a late Saturday morning when you’ve got nowhere to be is the best! They’ll love to stir, chop, snack as they go, and partake of the fruits of their labors.

{GREEN MINT BARK}
Adapted from Taste of Home

1 pkg. (10-12 oz.) white baking chips (I prefer Nestle because they tend to melt the best)
12 oz. green candy coating disks
1 tsp. peppermint extract
1-2 handfuls of Hershey’s Candy Cane Kisses, chopped

Instructions:
Line a 13×9″ pan sheet with foil; set aside.

Put the kids to work unwrapping Kisses while you open the bags and prep the pan.

Let them chop the Kisses into course chunks if you trust them with a butter knife.

She was very determined, as you can see, but did a great job.  🙂

In a microwave, melt chips; stir until smooth.  Spread into prepared pan.

In a microwave, melt candy coating; stir until smooth.  Stir in extract.  Spread over white layer.

Sprinkle with candy.
Chill for about 10 minutes or until firm.  Break into pieces with a butter knife.  Store in an air-tight container.

The kids were watching “How the Grinch Stole Christmas” while helping.  Jim Carrey plays a great role as the green, mean fellow, don’t you think?  He’s hilarious.  This dessert could easily be one served in Whoville. 🙂

Turn on your favorite Christmas movie, kick back, and enjoy this fabulous red, white and green indulgence!
