I love when the weather turns consistently warm and gives me the ok to fire up the grill again. It’s hard to believe that it was covered in snow just a few weeks ago.
And now we’re enjoying gorgeous sunshine-filled days where we want to spend every moment basking in the rays outdoors.
We basically barbecue almost every evening of the week once summer hits. Are you the same way? It’s just wonderful not having to heat up the house with the oven and cleanup is so much easier too! Plus, we love hanging out by the grill, waiting for our food to be done, while watching our kids run around, laughing and playing in the yard. If I could just freeze them in the age and stage they are in now, I’d be one happy lady forever!

These are so easy and quick to put together! Here’s how to do it:
We have some amazing grill mats that kept the cheese filling from spilling down in. If you don’t have those, you may need to level some of the lopsided peppers so they’ll sit flat.
Grilled Stuffed Kung Pao Jalapeño Bites
Ingredients
- 8 oz. cream cheese softened
- 1 tsp. minced garlic
- 1 cup finely-shredded cheddar cheese
- 2 green onions diced finely
- 1/4 tsp. salt or to taste
- 1/4 tsp. pepper
- 7 slices bacon cooked and crumbled
- 2 Tbsp. P.F. Chang's® Home Menu Kung Pao Sauce
- 7 large jalapeño peppers cut in half, seeds and membranes removed
Instructions
- In a bowl, combine cream cheese, garlic, cheddar cheese, green onions, salt, pepper, and P.F. Chang's® sauce. Fill each of the peppers with the mixture. Top with bacon crumbles.
- Grill on medium-high heat for approximately 8 to ten minutes, or until peppers reach desired tenderness. We did 10 minutes and they were nice and tender, just like we like them.
