Celebrate the spooky day with some fun and tasty Halloween Funfetti Cookies! These are so quick to make, starting with a cake mix and are perfect for Halloween parties and gatherings!
I took my kids to a trunk or treat tonight. They were so excited to get in their costumes. My daughter is a fox and my son is a dragon this year. We went to an old folk’s home and the kids got to walk around to the cute decorated cars and trick-or-treat. I love this time of year! The leaves have changed to their vibrant red, orange and yellow hues. The air is crisp and fresh. People are decorating their porches with pumpkins and their yards with skeletons and spooky things.
My kids are going to trick-or-treat with friends for a few hours on the 31st and then I’ll head out with them for an hour or so. It’s sad and happy when they get to the age where they don’t need mom to be with them all the time. But I’m excited for them to be with friends.
We always make a yummy Halloween dinner (Mummy Pizza) before heading out door to door to fill the candy buckets. A few nights before going trick-or-treating we have a Halloween-themed dinner that usually consists of a cheesy chicken dip with tortilla headstones on it and then snake breadsticks for dipping. Then I serve Ghost Cookies for dessert.
You know that cookies are my favorite dessert ever to make! I made these Funfetti Cake Mix Cookies years back and they were a huge hit! So I made the Halloween version! I love that they come together so quickly, so you can make them for a last-minute Halloween party. Plus, they’re so fun and festive with the Halloween sprinkles! You could add in ghost or bat sprinkles or anything your heart desires!
Every time I make Funfetti Cookies for a gathering, everyone goes wild for them! I know all the little ghosts and ghouls will be crazy for these cookies! Take them to class parties or share them with neighbors and friends. If you live in a neighborhood where you “Boo” your neighbors, this would be a fun treat to share!
To make these cookies, simply add a white cake mix to a mixing bowl, then add melted butter, vanilla extract, an egg and fun Halloween sprinkles (jimmies). Mix up the dough, then form into balls and press the balls down with the palm of your hands to flatten. Otherwise they won’t spread out very much while baking and will remain in balls. Then bake to perfection and enjoy!

Yields Makes about 20 cookies

Ingredients
- 15.25 oz. white cake mix (my favorite is Duncan Hines)
- 6 Tbsp. butter, melted
- 1/2 tsp. vanilla extract
- 1 large egg
- 1/3 c. colorful Halloween jimmies or sprinkles
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line baking sheets with nonstick baking mats or lightly spray them with nonstick cooking spray.
- In the bowl of an electric mixer, mix together white cake mix, melted butter, vanilla and egg. Stir in jimmies by hand.
- Scoop or roll dough into rounded 1 1/2" balls and place at least 2" apart on prepared sheets. Press dough balls down with the palm of your hand to flatten the balls. Bake for 8-9 minutes.
- Allow them to cool slightly on the baking sheets before removing them to a cooling rack to cool completely.
