I can’t wait to share TWO yummy homemade snack ideas with you today that are perfect for a summer roadtrip, picnics, potlucks, ball games, or just to munch on while having some much-needed down time at home.
And speaking of down time, when I picture summer, I think of lazy days spent eating cookies and sipping pink lemonade while watching my kids play in the back yard. What I imagine and reality are proving to be two very different things, however. Is it like that for you?
My kids just finished a session of swimming lessons, so the past few weeks were consumed with those, along with play dates with friends at the splash pad, picnics, amusement park trips, and trying to work in errands and housework somewhere in the crazy mix. Sometimes I had to remind myself to breath in between all the chaotic fun. But I wouldn’t have it any other way.
I’m a very scheduled person when it comes to my meals. My body lets me know when it’s time to refuel, and I quickly lose energy until I do. As long as my tummy is content, then I’m good to go! Because of my family’s busy summer routines, we’re often not home at that critical time when my stomach starts to complain.
Enter Dr Pepper Pork Taquitos and SNICKERS® Krispies Treats.
I can throw some tasty taquitos into a cute brown paper bag, run out the door, and snack while I’m out. It’s hopefully no secret that I really enjoy homemade food. Now I can bring the good stuff with me while we’re out-and-about, to maintain those crucial high energy levels. My three kiddos keep me hopping, after all!
Marinated in Dr Pepper, then slow-cooked in more Dr Pepper to tender perfection, the pork is rolled into mini corn tortillas and quickly baked so summer activities don’t have to be put on hold.
These sweet pork taquitos are filling and yummy! Who knew eating on-the-go could taste so good?! I cooked the meat portion the day before, then assembled and warmed the taquitos just before heading out the door.
{DR PEPPER PORK TAQUITOS}
Marinade:
2 1/2 lbs. boneless pork loin
1 1/2 c. Dr Pepper
1 Tbsp. brown sugar
Combine all ingredients in a gallon resealable bag and let marinate over night.
Liquid for cooking:
1 1/4 c. Dr Pepper
1/2 c. water
1/4 tsp. garlic salt
Mini Corn Tortillas
1 1/2 c. Monterey Jack Cheese
Drain marinade and put pork in slow cooker. Add Dr Pepper and water. Sprinkle garlic salt on top of the meat. Cook for about 8 hours on low or on high for 3-4 hours (meat will be more moist and tender when cooked on low). Meat will shred easily when done.
Sauce for cooked meat:
1/2 can (or 5 oz.) mild red enchilada sauce
1/2 cup Dr Pepper
1/2 cup brown sugar
Remove cooked pork to a plate and drain liquid in slow cooker. Puree above ingredients in a blender. Shred meat and add to slow cooker. Pour sauce over meat, stir, and allow to cook on low for another 2 hours for the flavors to meld. This is important.
Using a fork, place 1-2 tablespoons meat onto the edge of each tortilla and sprinkle with Montery Jack Cheese. Roll tortilla and place in a greased pan. Repeat for other taquitos, then spray prepared taquitos with cooking spray. This will enable them to get crispy while in the oven. Bake at 425 Fahrenheit for 15-17 minutes, or until tortillas are crispy.
Two 20 oz. bottles of Dr Pepper did the trick just fine for this recipe! They’re also a convenient size for the car or toting in a hand bag.The leftover meat can easily be frozen and saved for another busy day when homemade sustenance is just what the Dr. ordered.
I just couldn’t leave Walmart without grabbing some of my favorite candy bars…SNICKERS®, now available in a perfect “2-to-go” size. I’ve had a love affair with the divine chocolate, caramel and peanut bars ever since I can remember.
So I combined them with one of my favorite desserts…the Rice Krispie Treat, and boy is it good! Krispies Treats are so classic and simple, don’t you think? They can easily be bagged and brought on outings too. Just be prepared to be attacked when you pull out the goods. 🙂
Talk about divine! A peanut butter, marshmallow, SNICKERS® chunks base is drizzled doused in melted chocolate and covered in additional SNICKERS® pieces. The more the merrier!
{SNICKERS® Krispies Treats}
Adapted from Brown Eyed Baker
6 c. crispy rice cereal
1/4 c. peanut butter
1/2 tsp. vanilla
5 1/2 c. mini white marshmallows
3 Tbsp. salted butter
3 Tbsp. caramel topping (homemade or store-bought)
3 SNICKERS® 2-to-go candy bars (3.23 oz each), chopped coarsely-reserve 1/2 bar for topping
1/2 c. milk chocolate chips, melted
Peanuts for garnish, optional
Prepare a 9″x13″ pan by spraying with non-stick spray. In a large pot sauce pan over medium heat, melt butter. Add peanut butter, vanilla, marshmallows and caramel topping. Stir over heat until marshmallows are fully melted. Stir in crispy rice cereal and then SNICKERS® pieces. Transfer mixture to prepared pan. Rub butter on your hands and press mixture evenly onto bottom of pan. Drizzle with melted chocolate and sprinkle with remaining SNICKERS® pieces. Enjoy!
Ummmm….I think yes! If this is my intermediate reward for a hectic summer day, I’ll take it with a smile!
