My mom used to make Homemade Soft Oreo Cookies for an after school snack every once in a while. On these days, my siblings and I would jump off the bus and sprint home like our lives depended on it, so we could be the first to dig into the container full of soft, chocolate, cream-filled sandwich cookies. We were so crazy about them that Mom had to pull us away from the bowl after two or three, so we wouldn’t overdose on sugar. 🙂
We used to bring these cookies in bulk to parties and they always flew off the platters. Now I get to share them with my own little cookie monsters, and they can’t get enough.
I shared this recipe almost a year ago on Cheerios & Lattes as a guest post, but I wanted to go ahead and provide the full recipe on my site as well now.
These are still a family favorite dessert at our house, and I hope they become one at yours too! What I’ve learned about these after making dozens and dozens of them is that the brand of cake mix used will determine how puffy or flat the cookies are in the end. Pillsbury will turn out more rounded and Betty Crocker will be flatter.
Ingredients:
- 1 pkg. chocolate cake mix (I like to use Betty Crocker Super Moist Devil’s Food 15.25 oz)
- 2/3 c. shortening
- 1 tsp. vanilla
- 2 eggs
Cream Cheese Frosting:
- 1 pkg (8 oz.) cream cheese, softened
- 1/2 c. (1 square) salted butter, softened
- 4 1/2 c. powdered sugar
- 1 tsp. vanilla
Directions:
1. Preheat oven to 375 degrees Fahrenheit. Cream all ingredients together in a mixer and roll into balls. We usually make them walnut-size or bigger, but they are so cute in the mini form too! Just be sure to make them a uniform size. Place on ungreased cookie sheets.
2. Bake at 375 for exactly 9 minutes. Let sit on cookie sheet for 1-2 minutes, then transfer to cooling racks.
3. For the icing, add all ingredients to the bowl of an electric mixer and cream until fluffy.
4. Frost and enjoy!
If you’re not a fan of cream cheese frosting, sub in a vanilla buttercream (recipe below).
{VANILLA BUTTERCREAM FROSTING}
1/2 c. butter, softened
3 1/2 c. powdered sugar
1 tsp. vanilla
Begin creaming above ingredients in the bowl of an electric mixer. Add a few splashes of milk at a time, mixing in between, until the frosting reaches a creamy, spreadable consistency.
Yum! I could go for a few of these right about now!
