Breakfast foods are wonderful, are they not? We like to eat them for dinner too, when I’ve had a long day and need to make something quick. They’re filling, warm and just plain yummy!
I realize that peaches are out-of-season now, but this recipe is a must-save for later! I got a little carried away with the Halloween Extravaganza and forgot to share this. My mom used to make us breakfast every day growing up. We definitely took it for granted, since cereal was a hot commodity in our house and was reserved for Sundays only. Now, what I wouldn’t give to have my mom make me breakfast again. She used to whip up some pretty darn incredible homemade syrup for our pancakes and waffles. We were wicked and would usually top them with fresh whipped cream also. 🙂 Oh, the carefree days when we didn’t have to worry about the effect of too many calories.
I buy peaches by the bushel, then bottle the juice to use for syrup year-round. But, there’s no bottling necessary if you just want to grab a few peaches at the grocery store to make a single batch. Make sure the peaches are nice and ripe for best results. To make the peach juice, simply peel the peaches, cut in half, remove the core and then puree them in the blender.
{HOMEMADE
SPICED PEACH SYRUP}
2 c. peach juice or puree
1 c. sugar
2 T. cornstarch
1/2 t. cinnamon
1/4 t. nutmeg
1/4 t. nutmeg
Stir together sugar, cornstarch, cinnamon and nutmeg in a saucepan. Add peach juice and stir ’til combined. Bring mixture to a boil. Remove from heat when thickened and serve warm.
This syrup is a breeze to make and is wonderful atop these Homemade Waffles!
