My kids are crazy about the movie Big Hero 6, and because their mother loves baking (and eating sweet confections), I put together a themed treat…these wonderful Honey Lemon Cupcakes with the most amazing Lemon Buttercream Frosting…to go with the fun show.
We love all of the characters from the movie, but Honey Lemon is by far one of our favorites. She’s outgoing, cute, smart, and most of all…sweet! She’s all girl, too, as she accessorizes her outfits, glams out in pink, and even wears high heels as the team goes out on adventures. A girl after my own heart. 🙂
So I knew exactly what kind of food should represent Miss Honey Lemon…a yummy, sweet cupcake of the honey lemon variety, of course!

{HONEY LEMON CUPCAKES}
1 1/2 cups flour
1 cup honey
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1/4 c. lemon juice, fresh
1 tsp. finely-grated lemon rind
1 large egg, room temperature
2 large egg yolks, room temperature
1 1/2 tsp. vanilla extract
6 drops yellow food coloring (optional)

Preheat oven to 325 degrees Fahrenheit. Line muffin tin with 12 cupcake liners.
In the bowl of an electric mixer, cream together honey, butter, lemon juice, lemon rind, egg, egg yolks, vanilla. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
Add dry mixture to wet mixture and mix just ’til combined. Add in food coloring and mix until color is incorporated throughout.
Reserve 1/2 cup of batter and color it pink.
Divide yellow batter evenly among the 12 muffin cups.
Place a dallop of pink batter on top of each cup.
Using a toothpick, swirl the pink batter into the yellow batter.
Place in oven and bake for approximately 20 minutes, or until the tops of the cupcakes spring back when touched and a toothpick inserted into the center comes out clean. Don’t over-bake or the cupcakes will be dry.
Carefully lift the cupcakes from the tin and place on a cooling rack, then let cool completely.
{LEMON BUTTERCREAM FROSTING}
1/2 c. butter, softened
4 cups powdered sugar
4 Tbsp. lemon juice, fresh
5 drops yellow food coloring (optional)
In the bowl of an electric mixer, cream together all ingredients until fluffy. Frost cupcakes. I placed my frosting in a re-sealable bag and snipped the corner. Then I piped it high on the cupcakes. If the consistency is too thick, add a little bit of milk. If too thin, add a little more powdered sugar until desired consistency is reached. The amounts listed above yielded a perfectly creamy frosting for me.Top with lemon quarters, pink candies, and sprinkles of lemon rind, if desired.
If Honey Lemon from Big Hero 6 were a cupcake, this is what she would look like….bright and cheery, mostly yellow with pops of pink. The swirling of the contrasting-colored batter gives them an interesting tie-dyed effect…further reminding us of the fun-loving girl.
As for the taste…she’d have a cake base that was sweet and screamed “honey!” with a buttercream frosting that was flavored to perfection with fresh lemon juice. The combo is wonderful!
My kids had a blast helping me make these! They thought it was so cool that we came up with a cupcake that resembled the fun-loving character from the movie.
We can’t wait to grab a copy of Big Hero 6 at Walmart tomorrow and have a family movie night party with some more of these cupcakes!
