I don’t know about you, but I love grilling season! I enjoy spending summer evenings outdoors while the kids are play in the yard and my husband and I get a BBQ started! It’s the best!
We’ve had lots of rain here lately, which is so wonderful and needed, but it’s also making me so excited for warm, sunny days! We’re looking forward to Memorial Day weekend coming up! How about you? It’s always a great excuse to invite friends and family over, fire up the grill, and enjoy good food and great company!
On the docket for our Memorial Day food spread are these Chicken and Veggie Kabobs, a dill pickle platter, dinner salad, and of course Caramel Chocolate Chunk Brownies for dessert! Doesn’t it sound like the perfect way to party?! I think so!

Kabobs are always a show-stopper at gatherings! They just look so impressive! And their taste is unbeatable too!
Here’s how to put them together:

BBQ Chicken and Veggie Kabobs
Ingredients
- Hunt's Cherry Chipotle BBQ Sauce
- Hunt's Mesquite Molasses BBQ Sauce
- 2 large chicken breasts cut into chunks
- 1/2 purple onion sliced
- 1 red 1 yellow and 1 orange bell pepper, sliced
- A large handful of brussels sprouts
- 1 package whole button mushrooms sliced in half
- Wooden skewers about 15
Instructions
- Soak your skewers in water for at least an hour (if using wooden skewers) to help prevent burning. First slice all your veggies (mushrooms, zucchini, red onion, bell peppers, and brussels sprouts) and cut chicken into chunks. Skewer everything and pour a generous amount of Hunt's Cherry Chipotle BBQ Sauce and Hunt's Mesquite Molasses BBQ Sauce over, then brush to coat.
- Grill on high heat for 6-7 minutes per side, turning once. Insert a temperature gauge into the chicken chunks to ensure they're done (it should be at least 165 degrees Fahrenheit). Drizzle or brush with additional Hunt's BBQ sauce before serving.
Any BBQ wouldn’t be complete without a classic green salad, am I right?! It’s the perfect way to bring color to the plate! Wishbone Italian Dressing is like the cherry on top!

I think you all know that the part I always most look forward to about dinner is the dessert! 🙂 These thick Caramel Chocolate Chunk Brownies could not be easier to make and are absolutely phenomenal! The guests will be raving about them for a long while! They’re even more decadent topped with some Reddi-wip Original!
Here’s how to make them:
Make two packages of Duncan Hines brownie mix, according to package directions. Spread into a parchment-lined 9″x13″ pan. Sprinkle with 1 1/4 c. chocolate chunks. Make a caramel sauce by stirring 1 c. caramel bits with 3 Tbsp. evaporated milk in a small sauce pan over the stove top on low heat. Stir constantly until the caramels are melted and mixture is nice and smooth. Pour over brownie batter and bake at 350 degrees Fahrenheit for approximately 38 minutes, or just until set and baked through. Don’t over bake! You want them to be chewy and fudgey!
