Irresistible Scotcheroos

Have you heard of O Henry Bars?  Growing up, we used to call  them “Scotcheroos”.  Even though they are one-in-the-same, I kind of prefer the latter title, maybe just for old time’s sake.  They’re an irresistible crunchy square made of butterscotch chips (thus the “Scotcheroo” title), peanut butter, a few other high calorie (but oh-so-yummy) items, and of course Rice Krispies.   And then, because that’s just not quite enough, they’re smothered with melted chocolate chips.  Ooooh la la!!

They’re a definite splurge and “not for the faint of heart”, as my mom described them when I called to get the recipe, but hey, isn’t that what exercise is for?  🙂

 

These puppies are more than worth a tiring, sweaty, 5k run.  Add in two kids in a stroller uphill in 90+ degree weather, and they’re still worth it.  No joke.
 
{SCOTCHEROOS}
1 c. peanut butter
1 c. white sugar
1 c. karo syrup
1 pkg. butterscotch chips
6 cups rice krispies
1 pkg. semi-sweet chocolate chips
Spray a 9×13 pan with cooking spray.  In a large pot, add peanut butter, sugar, karo syrup and butterscotch chips.  Melt over medium heat, stirring constantly.  When all melted, add Rice Krispies and quickly stir until all coated.  Immediately press mixture evenly into prepared pan.  Melt chocolate chips in microwave in 30 second increments, stirring in between.  Pour over the Krispies base, let set (in refrigerator for a short time, if necessary), then cut into squares.  Serve at room temperature.
