A comforting tomato-based broth soup that’s loaded with veggies, Italian seasonings and yummy bowtie pasta, then topped with parmesan cheese! And, as a bonus, it can be made in the slow cooker!
There’s no doubt that we are crazy about soup at our house. It’s just so enticing and satisfying when the weather outside is cold! Last week we had our first real snow storm of the season. The kiddos got a snow day too! So they stayed home, made snowmen and watched movies in their jammies. If you follow me on Instagram, you may have seen that they even did some hot tubbing with their dad while the flakes were still falling! So many memeries. We are absolutely loving our new home.
And one thing that I really enjoy is the excuse to make more soup, because the temps are always plummeting this time of year!
So the other day when I was feeling extremely lazy, but still wanted a warm, homemade meal, I threw some ingredients in the crockpot in the morning. It was one of those situations where I scanned my pantry and fridge for items I had on-hand and needed to use up, threw them together, and bam, I had what I termed Italian Bowtie Soup. My family gobbled up the results, so I’m sharing the recipe with you today! Hooray!
It really couldn’t be easier to make!
{ITALIAN BOWTIE SOUP}
Serves 6
4 links Italian Sausage
1 onion, diced
1 Tbsp. garlic, minced
1 cup chopped celery
1 cup chopped carrots
3 1/2 cups beef broth
1/2 cup water
1 can (8 oz) tomato sauce
1 can (14.5 oz.) diced tomatoes
2 tsp. Italian dressing mix, dry from the packet
1 tsp. basil
1 Tbsp. oregano
2 cups Bowtie pasta
Cook and crumble Italian Sausage in a skillet with onion and garlic. Add to crockpot with celery, carrots, beef broth, water, tomato sauce, diced tomatoes, Italian dressing mix, basil and oregano. Don’t add the bowtie pasta yet!
Cook on low in the crockpot all day (8-10 hrs) or on high for 4-5 hours. Add bowtie pasta in for the last 15 minutes, or just until soft and cooked. Serve immediately with parmesan cheese, if desired. Enjoy!
