This incredible loaded French bread resembles the classic and best-loved Jalapeño Popper. It’s topped with a creamy chicken sauce and heaps of melty cheese, crispy bacon and jalapeños. This is the perfect appetizer or main dish, as the chicken makes it hearty and filling. This one will have everyone going back for more!
Our life has been extra crazy recently. And it’s not going to let up anytime soon.
I’m calling this the “year of the weddings”. We have three family weddings happening over the next few months.
I hit the road last month with the kids over their spring break to attend my brother’s wedding. Then next month, I’ll be flying out with my youngest so I can witness my sister and her fiance tie the knot. Since the older kids will still be in school, I didn’t want them to have to miss an entire week, so they’ll be hanging at home.
I’m already out of breath just typing about these events. Lastly, my brother-in-law will be getting married over the summer, so we’ll be making the trek out of state for that. Though I’m not looking forward to all the driving we’ll be doing (send road trip with kids tips immediately, please), I am so happy for all of them taking this exciting step and starting this new journey in their lives with their loves.
That being said, I have been feeling extra “comfort food-y” recently. Is that a thing?
You know what I mean. When life gets extra hectic and I manage to stay afloat, I just want to sit down and reward myself with a big slice of saucy, cheesy bread. Don’t hold back on the bacon and jalapeños!

Let me tell you, this delightful stuff is worth every calorie and really hits the spot!
I made this Jalapeño Popper Lasagna some years ago, and since it was such a huge hit, I decided to serve it up as a French bread topping. Let’s just say it’s incredible. We sat around the dinner table in utter and complete awe at the total deliciousness we were experiencing.
This stuff should be served as starters at restaurants! It’s that top-notch amazing.
I threw in some shredded chicken to make it heartier and to increase the scrumptious factor. You can totally use a rotisserie chicken to save time.
And since no one likes to eat soggy bread, I have a special trick/tip for you in the recipe that I learned from my good friend Lindsay over at Leesh and Lu’s Recipe Box.
The texture is spot on and the jalapeños give it just a little kick, but nothing overwhelming.
Let’s not even start with the bacon…are you as obsessed as I am?

Jalapeño Popper French Bread
Ingredients
- 1 loaf fresh French bread from the bakery section of the grocery store
- 2 jalapeños seeds and membranes removed and sliced
- 8 pieces bacon cooked and crumbled
- 1 1/2 c. cooked shredded chicken, this is about 1 large chicken breast, (use rotisserie chicken to save on time),
- 4 oz. cream cheese softened to melting point
- 1 c. Alfredo sauce
- 2 c. shredded Mozzarella or Monterey Jack cheese
- Olive oil and grated parmesan cheese
Instructions
- Preheat the oven to 400 degrees Fahrenheit. In a large bowl, stir together cream cheese and Alfredo sauce. Add shredded chicken and stir together.
- After cooking the bacon, saute the jalapeño slices in a little of the bacon grease until softened. Remove from skillet and set aside. If using an alternate method for cooking bacon, saute the jalapeño slices in a little olive oil.
- Slice the bread lengthwise and place on a foil or nonstick baking mat-lined baking sheet. Press the bread down on the cut side with your hands. Brush on a light coating of olive oil and sprinkle generously with parmesan cheese. This will create a barrier and keep it from getting soggy.
- Place in the oven and bake for about 4 minutes. You want the parmesan cheese to start to get crusty, but not burn.
- Remove from the oven, spread both pieces of the French bread loaf with chicken sauce mixture, then sprinkle evenly with cheese, then jalapeños and bacon. Bake at 400 degrees Fahrenheit for about 10 minutes, or just until the cheese is melty, everything is warmed through, and the bread is toasted.
