Layered Peach Crumb Delight

We’re taking a very brief break from the Halloween Extravaganza today, but any feelings of frustration you may have will be completely forgotten once you sink your teeth into today’s fantastic creation.  I can promise you that.  🙂

Fall desserts are absolute perfection.  Don’t you agree?  Fresh peaches, apples, pumpkin and savory spices combine to make sweets that are simply heaven-sent…just one of the many reasons why I love autumn time.  I’m so ready to pull out the comfy sweaters, the jeans and boots and to witness the leaves change into gorgeous hues.

I can’t wait to have cooler temps too!  Last week we vacationed in Disneyland and just about melted.  I don’t think southern California got the memo that summer’s at its end.  According to our step counter, we walked 40 miles over the 4 days we were there.  Yep, all in the name of fun.  No complaints here, though. We had a great time visiting Mickey and Minnie.  It was a party from park opening to when they pushed us out and closed the gates behind us.  🙂  Now that we’re home, we literally could use a vacation from our vacation.  Do you ever feel like that?  Seriously, I think it may take weeks to catch up on lost sleep and energy.

In honor of fall, I concocted this tasty creation the other day because I had peaches coming out my ears and I needed a quick sugary fix.  We’d been eating them for breakfast, lunch, and dinner and the supply didn’t seem to be depleting in the least.   So here you have it…a fantastically delicious layered Peach Crumb Delight!
Everything seems to taste better in a jar, don’t you think? This tasty creation is almost like peach pie, but a million times easier to make! You could be enjoying your own in 10 minutes or less!
 
{LAYERED PEACH CRUMB DELIGHT}
Yield: 2 pint-sized mason jars full
Peach Layers:
4 medium peaches, skin removed and sliced
2 T. sugar
1/4 t. cinnamon
Crumb Layers:
1 c. graham crackers, crushed
1 T. sugar
2 t. melted butter
1/4 t. cinnamon
4 oz. Cool Whip or sweetened whipped cream
Stir together cinnamon and sugar, then pour over sliced peaches and stir lightly until combined.  In a separate bowl, stir together crushed graham cracker crumbs, sugar, and cinnamon.  Stir in melted butter until combined and a little crumbly.  Grab your Mason jars and begin by putting about 1/4 of the peach mixture in the bottom of each.  Carefully pack down the peaches slightly so the crumbs won’t pour through empty spaces.  Next, pour 1/4 of crumb mixture over peaches.  Top crumb mixture with a little cool whip or whipped cream, and repeat layers once more.  Top with a dollop of cream or cool whip and sprinkle a little cinnamon on top for a pretty finish.

 

I could barely keep them in tact long enough for the photo session.  My husband and I went in for the attack after about two pictures and I’m a little ashamed to admit that there was not a crumb left only minutes later.
