Are you a lemon desserts lover? If so, you have to bolt to the kitchen and make these Lemon Blondies! They’re melt-in-your-mouth delicious!
I Googled “Best Lemon Dessert Recipes” the other day and loads of lemon brownie recipes popped up. I immediately started drooling and I knew I needed to set out to make my own version.
But I feel like the term “Brownie” should be reserved for desserts that are actually brown, i.e. made of chocolate. Like these ones that I adore so much.
So I set out to make a Lemon Blondies recipe. These are tender and loaded with fresh lemon flavor! They’re finished with the perfect lemon glaze!
One of the best parts about this dessert is that it’s all made in one bowl! Well, not including the glaze. It comes together so quickly and you won’t even have a sink full of dishes afterwards! Lemon desserts are what summer’s all about! Don’t you agree?
These blondies remind me a great deal of these Lemon Lovers’ Dream Cookies. Every bite practically dissolves in your mouth. You know what I’m talking about? When the confection is so heavenly that your mouth breaks it down before your teeth can even get to it? This is that kind of dessert.
The texture is perfectly soft, tender and moist. What’s not to love about this?

Lemon Blondies
Ingredients
- 3/4 c. butter melted
- 1 1/4 c. granulated sugar
- 1/4 c. fresh lemon juice
- 1 1/2 Tbsp. lemon zest
- 2 large eggs
- 1 1/2 c. all-purpose flour
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- Glaze:
- 1 1/4 c. powdered sugar
- 2 Tbsp. fresh lemon juice
- 1 tsp. lemon zest
- A teaspoon of milk or so if necessary, for thinning
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Line a 9"x13" pan with parchment paper so it hangs over the edges.
- In a large microwave-safe bowl, melt the butter in 30 second increments in the microwave. Stir in the sugar by hand.
- Add fresh lemon juice, lemon zest and eggs and stir by hand just until incorporated.
- Add flour, salt and baking powder and stir by hand just until incorporated. Don't over-stir.
- Spread batter into prepared pan and bake for approximately 18 to 20 minutes, or just until baked through and set up.
- Allow them to cool completely, then prepare the glaze by whisking together powdered sugar, fresh lemon juice and lemon zest (and milk, if necessary, for thinning). Pour and spread over cooled bars. Let the glaze set up completely, then slice into bars and serve.
