I think I’m obsessed with lemon and blueberry together! Are you the same way? I made these Lemon Blueberry Crumb Bars a few years back and they are absolutely heavenly! So then of course I couldn’t stop at that!
Frosted sugar cookies always get me. And by that I mean I just look at them and I basically say goodbye to any self control I thought I had. I was looking through some of my most favorite dessert recipes here on the blog and I came across these Strawberry Banana Cream Pie Bars. The sugar cookie base is perfection! So I thought, why not add a yummy hint of lemon to it and then top it with blueberry buttercream frosting?

I’ve made at least twenty different varieties of buttercream frosting in my life, but this just might be my new favorite, next to chocolate, of course. 🙂 You’ll puree some fresh blueberries, then cream that together with some softened butter and powdered sugar. That’s it! Three simple ingredients gets you the most unbelievable, finger-licking incredible frosting!
Just make sure you don’t over-bake the lemon sugar cookie bars. The key to a deliciously soft sugar cookie is baking it to perfection! One or two minutes can make the difference between a soft cookie bar and one that’s dry and crunchy. I always set my oven timer for a few minutes less than what’s called for in the recipe and then check it every minute until it’s done to prevent burning. You’ll want them to look like they’ve set up, but you don’t want to see the edges browning.

Lemon Sugar Cookie Bars with Blueberry Buttercream Frosting
Ingredients
- Sugar Cookie Bars:
- 1 1/2 c. sugar
- 1 c. butter softened
- 1 large egg
- 1 1/2 tsp. lemon extract
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- 2 1/2 c. all-purpose flour
- 1/2 tsp. salt
- Blueberry Buttercream Frosting:
- 3/4 c. butter softened
- 5 c. powdered sugar
- 1/4 c. fresh blueberry puree
Instructions
- For the sugar cookie base, in the bowl of an electric mixer, cream together sugar, butter, egg, and lemon extract. Cream well. In a separate bowl, stir together baking soda, baking powder, flour and salt. Add flour mixture to wet mixture and mix just until combined.
- Press mixture evenly into a lightly greased jelly roll or cookie pan and bake for approximately 10-12 minutes. Check at 10 minutes. Don't over-bake or they won't be soft. You'll want them to be just barely set but you don't want to see browning. Allow the bars to cool.
- Make buttercream frosting by creaming together softened butter, powdered sugar and blueberry puree until creamy and fluffy. Mix at least two minutes. If after mixing for 2 minutes, you think it needs to be thinner, add milk a tablespoonful at a time, mixing in between, to thin. Mine was a perfect consistency without adding milk. Spread frosting over cooled bars, slice, and serve.
