These perfect buttery yellow cookie bars infused with lemon and white chocolate flavors are a delectable dessert for springtime, summertime, or anytime!
When the warmer weather arrives, I start to crave all things lemon! Are you the same way? There’s just something about the flowers blooming and birds singing that triggers the desire for citrus! At least for me. 🙂
So I thought, “Why not make the traditional blondie bar, but insert some lemon? How fun would that be?” And fun it is. If fun translates into delicious, chewy, divine, and utterly scrumptious.
{LEMON WHITE CHOCOLATE BLONDIES}
1 c. sugar
1 c. butter, softened
1 egg
3/4 tsp. lemon extract
2 c. all-purpose flour
1 tsp. baking soda
1 tsp. cream of tartar
1/2 tsp. salt
1 c. springtime morsels (they are pink and yellow with some regular chocolate chips, but I picked out the regular ones), or just use white chocolate chips
1/4 c. white chocolate chips for the drizzle
Cream together sugar and butter, egg and lemon extract. In a separate bowl, stir together flour, baking soda, cream of tartar and salt. Add to wet mixture and mix until combined. Stir in white chocolate chips or spring morsels. Press into a lightly greased 9″x13″ cake pan. Press additional morsels in the top before baking, if desired. Bake at 350 degrees Fahrenheit for approximately 15-20 minutes. Let cool, drizzle with melted white chocolate chips, and cut into squares. Enjoy!
How’s the weather where you are? We’ve been relishing in the sunshine and warmth over the past week of my daughter’s spring break. We went to the park most every day and had a picnic and then spent a day at wonderful White Sands where the kids literally sledded down the dunes that look like snow. I didn’t want it to end.
But we can relive the happy, warm memories as we enjoy these little squares of exquisite bliss. Heaven in every bite.
I added springtime yellow and pink chocolate chips, but any white chocolate flavored chip will do the trick.
I wish I could duck into the computer and take another bite of that goodness. A hint of lemon, but not overwhelming, with a sweet sugar-cookie-like base, happily married to white chocolate. Get in my belly!
