Today I’m ecstatic to share two fantastic recipes with you…some soft Lemonade Sandwich Cookies and a mouthwatering Kool-Aid Julius juice drink!
Some of my favorite summer memories as a child involve setting up a lemonade stand on the side of the road with my siblings and trying to guilt passersby, with our best puppy dog faces, into purchasing a cup or two. The product we created was probably sub par, but if it was hot enough outside and we pleaded well, the fish took the bait. 🙂
I’d like to think that I’m a little more mature now, and though I still love a good cup of ice cold lemonade, my tastes have morphed a bit to where I enjoy the classic childhood flavor in many other forms too, like these delicious Lemonade Sandwich Cookies!
Aren’t they pretty? Because I was feeling rather zealous, I made half the cookies with Pink Lemonade Kool-Aid powder and the other with regular Lemonade Kool-Aid powder. They are both phenomenal. I mean, how can you go wrong with lemonade, whether it’s pink or yellow? I don’t think it’s possible.
They’re a perfect summer treat that are highly likely to take center stage at a potluck or picnic. I typically double the batch because they are just that good!
{LEMONADE SANDWICH COOKIES}
1 pkg. (15.25 oz.) moist yellow cake mix, unprepared
1 tsp. vanilla
2/3 c. shortening
2 eggs
1 tsp. Kool-Aid Lemonade or Kool-Aid Pink Lemonade drink mix (dry from the packet)
Preheat oven to 375 degrees Fahrenheit. In the bowl of an electric mixer, mix all ingredients until just combined. For pink lemonade cookies, add in 8 drops red food coloring before mixing. Don’t over mix or the balls will not flatten right when baking. Roll into balls and place on un-greased cookie sheet. Bake for 8-10 minutes.
Let sit for 2 minutes on the cookie sheet, then remove to wire racks to cool. Frost with Cream Cheese Icing (recipe below).
{CREAM CHEESE FROSTING}
1 pkg. (8 oz.) cream cheese, softened
1 stick (1/2 c.) butter, softened
4 1/2 c. powdered sugar
1 tsp. vanilla
Mix all ingredients on high in the bowl of an electric mixer until creamy and fluffy. Frost cookies and enjoy!
Two soft cookies happily sandwich a complimentary cream cheese filling. Talk about heaven! And speaking of heaven, my family’s summer has been bliss so far. I hope yours has been wonderful too! Now when I say bliss, I’m talking jam-packed, overflowing with adventure and fun. I’m sure it will continue until the last moment possible before school starts up again. So much for lazy summer days, am I right? But I wouldn’t have it any other way.

Oh, like river rafting, swinging off cliffs at an amusement park, cave touring, an early morning Freedom Run, and hiking the Maroon Bells mountains in beautiful Aspen, Colorado. Life is rough, what can I say? 🙂 Don’t worry…the kids partied with their grandparents, aunts, and uncles, while the hubby and I spent this much-needed time away.
All this talk of adventure is making me thirsty, how about you? Amidst all the craziness, I squeezed in a trip to Walmart to pick up the ingredients for a yummy summer drink involving a soon-to-be revealed item on the other side of this stand…
…a bottle of Grape Kool-Aid!
I knew after a week of playing hard in the sun, we’d need some serious refreshment, and I was certainly right! But I wanted to shake things up a bit and make it into something simply irresistible, and thus the Kool-Aid Julius was born.
My brother is the mastermind and model behind this drink. He took our childhood favorite “Orange Julius” and sent it for a yummy, slushy, grape spin!
Ta da! This beautiful slushie-of-sorts is every bit as good as it looks. It’s a perfect way to #KoolOff on a hot day.
{KOOL-AID JULIUS}
Yield: 1 serving
2 c. Grape Kool-Aid (available in a convenient 96 oz. ready-to-drink bottle)
1/4 c. sugar
1 tsp. vanilla
Ice (up to 1 tray)
Place Kool-Aid, sugar and vanilla in a blender with a handful of ice and slowly pulse until ice breaks up. Add in more ice, a little at a time, and continue pulsing until drink thickens and reaches the desired slushy texture. Note: The Kool-Aid and ice measurements are approximate, as they can easily be altered to achieve your desired drink consistency.
